My parents are taking my DNiece and DNephew. What documentation is needed for them to do this?
 
Your parents will need to bring a birth certificate and drivers license or a passport. The kids if they dont have a drivers license then just a birth certificate will do for them. Along with the birth certificates for the kids disney's website says the following about minors:

Minors under the age of 18 not traveling with a parent or legal guardian must be accompanied by an adult over the age of 21 in the same stateroom and must have the Cruise Contract signed by a parent or legal guardian. The signed Cruise Contract must be received upon Walt Disney World Resort check-in or prior to embarkment.

Ticket/Cruise Contract
Your ticket is the Cruise Contract that is enclosed in every document package. Carefully read your Cruise Contract as it contains important terms and conditions that govern your cruise vacation. It must be signed by all Guests upon check-in at a Walt Disney World® hotel or prior to embarkment at the Disney Cruise Line® Terminal. In the event of conflict between the terms and conditions contained in the Cruise Contract, these Terms and Conditions, the terms of any Disney Cruise Line advertisement or offer, and the oral or written representations of any Disney Cruise Line representative, the terms and conditions contained in the Cruise Contract shall control.
