What did you bake today ? OK if not from scratch

Today - birthday cupcakes for one of my staff members and her 'tween daughter, whose birthdays happen to fall together tomorrow. Rainbow bit cake (from a mix) with delicious homemade chocolate buttercream and decorated in a Unicorn theme. I bought this little cardboard stand at Party City and I'm delighted with how adorable it turned out with the cupcakes on it:

Today, I baked bread pudding from Challah bread I had saved. I used a few extra pieces to make Challah French Toast this morning.

Last week I baked a quiche and made the key lime pie from Deni's Saturday Snacks.
(Btw, you can use the egg whites left over from the receipie to make a meringue. Add a generous pinch cream of tartar, pinch of salt to help stabilize the whites. I added a generous 1/8cup fine sugar when soft peaks form then beat to firm peaks. I shortened the filling only baking time to 10-12min and covered the exposed crust during that initial baking. Kept the oven at 350, removed the covering from the crust and baked for another 10-15 minutes until meringue was browned and resisted touch.)
 
It’s Thanksgiving weekend and we’re having our turkey tomorrow. I’m making pies - normally pumpkin, apple, raisin, lemon meringue and coconut cream. This year, with no crowd to eat them, I have to pare back but I’m having a hard time deciding what I’m willing to do without. :(

Hermit cookies and apple cake both from scratch, as well as tortellini salad to that we brought to family's house for dinner.
Love Sunday dinner around the table with family.
The icing on the cake was 2 year old granddaughter saying after the meal, "That was good food!"
 
Baked macaroni. A family recipe from the Depression. Take a pound of elbow macaroni and cook it according to the package directions (don't overcook because it will be baking.) Mix with a pound of shredded American cheese and a large can of crushed tomatoes. Pour into a large baking pan and spread bread crumbs generously over the top. Bake uncovered at 350 for one hour.

Simple and delicious.
