What did you bake today ? OK if not from scratch

Took a $1.00 chocolate cake mix from Aldi, used up 2 overripe bananas, 2 eggs instead of 3, stirred in 2/3 C chopped walnuts (my 98 yr old mother in law always said walnuts are Brain Food so I toss in everything) and put in greased loaf pan. 350 40 min.

It was moist and great. Love having 'slices' of cake.

PS: I DID add the recommended water & oil. Sorry....I type too fast.

Today I made chocolate chip cookies using the recipe on the Crisco baking sticks package. It is a bit different from my usual recipe plus I used half and half instead of milk and didn't have quite enough of chocolate chips so I added Hershey's kisses to make up the difference. They came out really good! Nice with a cup of tea on the raw, rainy day.
 
Over the weekend I made a noodle pudding for my brother in law who is recovering from an illness. I asked him what he would like when he was able to eat again and I would bake it. He requested noodle pudding that his mom used to make. It was a hit.

I also baked chocolate chip cookies with my 3 year old granddaughter....she was a good little helper!
 

Made what I thought would be peach muffins today.

Changed the flour used to 2 parts whole wheat and 1 part AP flour, added a bit of wheat germ and some walnut pieces content in the knowledge that they’d tasty and healthful. Somehow they looked different when they came out the oven. Turned out the frozen bag of peaches was actually a fruit medley of mango, bananas, pineapple and peaches so they are in fact tropical muffins, lol. And into the freezer they go, lol.
Oh and I bought freezer bread bags from King Arthur for the first time. Worthy, truly worthy.

I'm so sorry for the late response, I was camping at Fort Wilderness for 2.5 weeks and just came home this weekend, we brought home an unwanted Disney souvenir and am just starting to feel somewhat better.

Sausage Muffins:
1 cup Bisquick
1 lb cooked breakfast sausage, crumbled
4 beaten eggs
1 cup shredded cheddar cheese

Mix together, scoop into greased muffin pan, bake for 20 minutes at 350.

These can be frozen and then warmed in the microwave
