As a spin-off of the pantry clean out thread- I'm in the process of eating down our freezer, pantry etc. and just trying to reduce waste. I have an excess of Lightly Salted Almonds.
Wondering if anyone has something delish they make with Almonds. Normally they are for me for snacking, but I have more than I will eat by myself. Hoping to make something yummy the kids (who need the calories) will consume.
Feel free to jump in with your own, "What can I make with..."
 
You can freeze almonds so if you can't use them right away, at least they won't be wasted.
They are good in chex mix and cereals.
 

Toast them in the oven. Add whatever spices and seasoning you'd like, I use cumin, paprika, crushed garlic and soya sauce. Place them onto a baking tray with a baking sheet in the oven at 350 F for about 5 minutes, or until they're toasted enough for you! I usually add them to salads, hummus sandwiches or avocado on toast.
 
Take a grater and grate them on salads, or on cooked vegetables like green beans, or peas.
 
I buy almonds on sale after Christmas and freeze them in vacuum sealed 4oz packages. I use them for snacking, almond crusted fish and chicken dishes, asian style salads, green beans almondine etc. I have packages over a year old that are still perfectly fresh tasting.
 
Asparagus Casserole (delicous!):
Mix 2 tubes of Ritz crackers with 1 stick of melted margarine. Spread half of cracker mixture in bottom of casserole dish. Drain a can of asparagus and spread over crackers. Sprinkle 1/2 cup sliced almonds over asparagus. Melt 1/2 stick margarine in pan. Mix 3 T flour, 1/2 t salt, and 3/4 cup milk together. Add to melted margarine along with a jar of Old English cheese. Cook at medium heat until smooth and thickened. Pour over asparagus. Top with remaining cracker mixture. Bake at 375 for 10-15 minutes.
One of our favorite holiday side dishes!
 
You can crush them up & use as part of a crust for pudding or custard pies, or as a topping for cobblers. You could also add them to stuffings or to coat chicken.
 
too many almonds? I am unfamiliar with this idea....:rotfl: I keep them in the freezer,and I tend to eat at least a handful daily for food...they last a long,long time in the freezer.... but I also like toasted nuts tossed onto salads,and just about anything.....
