I am really picky about bread. How do you freeze it and more importantly, how do you thaw it? I refuse to eat bread that is cold. I know people do this, but I am the type of person that won't even make my kids lunches until that morning. I hate to put it in the fridge the night before, YUCK
When I freeze bread, I generally just put it in the freezer in its original wrapper (I'd put it in a freezer bag if I was going to keep it in there longer than a week or so) and take it out and let it thaw on the counter. I also slice Italian bread and put the slices in the freezer to make garlic bread - just take it out (still frozen), spread with butter and garlic salt, and pop in the toaster oven.
