What are signature restaurants?

I see posts about signature restaurants and would like to know which ones these are. Currently we have the middle of the road dining plan. I saw a post about signature plans requiring 2 TS credits.

Also, is there a place either here or on Disney's site that can help me understand the plan better. I have tried to look but cannot readily find the information and to be honest I am sidetracked on to a different tangent with each click.

Signature restaurants and table service restaurants are both table-service meals but signatures are considered "fancier" (though they aren't particularly fancy and you'll find all kind of attire) and to have higher quality food (generally speaking) than a regular table service restaurant. For example, you'll typically get a better cut of meat if you go to a signature steakhouse than if you got a steak at a "regular" table service restaurant. Signature restaurants also cost 2 table service credits on the dining plan instead of one, so basically it costs two dinners to eat at a signature restaurant (1 TS credit = 1 meal). Some of the better reviewed signature restaurants include Narcoosee's, Yachtsman, California Grill and Jiko. Since a signature restaurant costs 2 credits we typically don't eat at them, though we did enjoy Yachtsman and are trying Narcoosee's this coming trip. Narcoosee's has a steak and lobster tail meal that costs about $65 out of pocket so using 2 credits for that seems ok.

Think of a table service restaurant as similar to a Chili's or Applebee's (though some are better quality than those and some worse), where a signature restaurant is more similar to a higher end steak or seafood restaurant (but probably not as good a quality as what you'll get at a place like Ruth's Chris).
 
Signatures are simply Disney's label for their more 'upscale' dining options.
While they're not on par with say Del Frisco's or Capital Grille, I'd compare our experiences at Disney's signature locations to the same experiences we'd have at Chart House or Vic and Anthony's Steakhouse.

The plan is not of value unless you would dine the same way without it, even then it only saves a few dollars, unless you're going during free dining.
For us, we vacation on the deluxe dining plan because we would visit a signature each night and a 1TS for lunch each day and we would order 2 courses at least at each location. So during free dining, we actually save several hundred dollars.
