What are Chef TJ's days off???

We are going to WDW with a couple of vegetarian friends (not vegan though) and would LOVE to wow them with some of Chef TJ's creations at O'hana (which is one of OUR favorites but I thought would be off limits with them but no!)

I was thinking our first night there which is a Sunday but I remember reading that he is off a couple of nights on the weekend - is that Fri and Sat or Sat and Sunday???

He was there Sunday, September 3, 2009.

There's really no guarantee that he'll be there any given night even if it isn't his regular night off - he could be sick, on vacation or switching shifts.

Of course I realize there is no guarantee but there is a pretty good chance he WON'T be there on his night off!

I asked this same question yesterday on the disABILITIES! board because his reputation for food allergy creations is just as good as his reputation for vegetarian meals. Somebody said that they're getting ready to bid on new shift rotations so his current schedule could change and another person said he's getting ready to retire. I really hope this isn't true. I ended up booking an ADR on a Friday but I'm betting he won't be there. Somebody else did confirm though that when they were there on nights that he wasn't, the chef that was there prepared foods similar to what she had seen in some food pictures posted by other allergy sufferers so I guess he's trained the other chefs to do things like he does. I'm counting on that being correct.
