@leebee is the SOUP QUEEN!In the fall and winter we have soup for dinner a couple of times a week. I make a crazy-good chicken soup we call Garbage Soup, as I save the roast chicken bones and veg peelings (carrot, celery, onion) in the freezer till we have enough for a big pot. It all gets cooked in water or broth for a good long time, then strained. I then cook "new" carrots, onion, and celery in the broth until it's all soft and squooshy. It then goes into the blender, which makes a wicked flavorful, just slightly thick, soup. DD didn't used to like cooked veg, so this is how I'd sneak them into her. We'll have it with rice or noodles, or dumplings made with stove top stuffing. Oh gosh, it's good! I also make Pasta e Fagioli, french onion, split pea, chicken sausage with white beans and greens, corn chowder, cream of tomato, tomato basil, Italian wedding soup, "regular" broth-y chicken soup (based on Garbage Soup but the "new" veg are only cooked to eating consistency, and we serve it on rice or noodles, with chicken meat), cream of mushroom (or other veggies), a beef broth based mushroom soup, chicken leek, potato leek... as i said, we eat a ton of soup in the winter.
You should, hated it growing up, love it now.My Mom used to love this and I always hated it as a kid. But you mentioning it just made me think I should definitely make some and try again! Thanks for the idea!
