What’s for Dinner Tonight?

We were supposed to go to Summerhouse on the Lake for dinner but Disney Springs was crazy crowded today. We had D-Luxe Burger for lunch but didn't feel like sticking around until dinner so we went back to our hotel at Flamingo Crossings, watched the NASCAR race and got Cobb salads at Ellie Lou's Brews & BBQ. They were quite good!
 
We went to Universal Studios today. It's Mardi Gras season, so we had picanha from the Brasil booth for lunch. We also split a Big Pink doughnut from Lard Lad Donuts. A couple hours before dinner, we got ice cream from Florean Fortescue's (sticky toffee pudding for me, strawberry peanut butter for my boyfriend).

For dinner, we went to The Cowfish and split three rolls between us (they were huge!):

Philly Roll -
premium salmon, avocado, cream cheese

Flamin' Salmon Roll -
spicy salmon, togarashi spicy mayo, minced pickled ginger, scallions, jalapeño strings, flash fried with tempura flakes, cayenne pepper strands

Mark's Roll -
premium tuna, jalapeño, cream cheese, kani, scallions, coated with panko, flash fried with Japanese mayo, sriracha, ponzu dipping sauce
 

@tarheelmjfan Eating on the road is always a challenge, and between my own stuff and DD's competition schedule, I'm about to do a lot of that. I also think I'll have to learn how to use my phone and doordash; I was pretty jealous watching folks at yesterday's competition chow down on Olive Garden food while I was eating cheese and crackers for the 2nd time that day! It's good to know that TacoBell has put the salad back on the menu.

Tonight will be creamy chicken/veg/wild rice soup. I started it last Thursday as DD/SIL/LittleGuy were coming for dinner but that plan changed, so it was on the menu for Friday, but THAT plan changed. DD and I were away from early Saturday until about 11pm yesterday, so obviously I wasn't eating supper at that time. SO soup and rolls tonight, salad if I get to the store. I'm tired and have a mountain of work to do so I'm not sure about the store. How can I already be tired when it's not even 8am yet?
 
It’s not going to get above freezing but the sun is out! More snow tomorrow. 15 days until I can plant peas! 😂 This has become the running joke between me and my dad. I normally plant them around St Patrick’s day. I have 2 feet of snow on the garden.

I have a whole chicken in the crockpot. I’ll serve it with mashed potatoes and asparagus.
 
Today was our Islands of Adventure day. We had lunch at Mythos. I had the Souvlaki Couscous bowl and my boyfriend had the Fork, Knife, and Spoon grilled cheese.


Souvlaki Couscous Bowl -
Moroccan beef kabob, za'tar spiced couscous, fresh cucumbers, marinated artichoke, Kalamata olives, spiced chickpeas, feta cheese, tzatziki, tahini dressing


Fork, Knife and Spoon Grilled Cheese -
A unique presentation of a classic 3 cheese sandwich set in a vine-ripe tomato soup with crispy pork belly and garnished with house-made chips


For dinner, we went to Bigfire. We both had the filet mignon with roasted shallot mashed potatoes and broccolini.
 
I’m WFH again today. We are expecting 2-3 inches of snow then ice.

Tonight will be chicken teriyaki noodle stir fry. Using chicken from the whole chicken I made yesterday and a bunch of veggies in my veggie drawer.

I also froze some chicken to make chicken fried rice next week. A whole chicken seems to last a long time with 2 people. I try to change up the leftovers so we aren’t eating the same thing for days.

We order from Doordash a lot, when we've been driving all day & are too tired to go out to eat. It's really easy. You definitely should to give it a try. Lunch is where I struggle, when we're driving. We usually want to get the quickest option available, so we can get to our destination ASAP. I'd love some tips for more healthy/ low calorie fast food or fast casual options that I can find in most areas.

I don't know if you're interested in going through the effort, but we take a cooler on the road. I try to always have stuff to make a turkey sandwich that we can stop at a rest area & put together, if necessary. (turkey, cheese, lettuce, bread & condiments) We also travel with fruit & DH likes to have chips available. Like you, we usually carry sandwich cracker multiple packs for desperate times. Babybel cheese is also good for a quick snack to tide you over. I like to combine one of those with half a green apple or plum for a more sustantial snack. I also carry my breakfast with me for convenience.
