Tonight is tater tot casserole- ground beef with green beans and onions and cheddar cheese. Tater tots on top.
This is one of my new favorite things. I started making it last year. It’s kinda like shepard’s pie with tater tots instead of mashed potatoes.

Navy son is on way back from drill this weekend and wants to stop over for dinner. He's been on vaca in Europe for 3 weeks, so I can't wait to hear about his adventures!

For dinner, I have a 3.5 lb tri tip getting ready in the fridge. I made a rub and got it ready before church. Low and slow on the Traegar. I'll roast up red creamer potatoes and do some sauteed garlic green beans. I'm hoping he's bringing me some swiss chocolate that we can have for dessert!

Tonight was cold leftover roast beef with Yorkshire Pudding and a salad. We are getting slammed with snow now until tomorrow afternoon. So now debating the next 3 nights options.

It has started snowing. DH is all weather all the time. He went to school for meteorology and was just in a zoom with school friends talking technical weather talk

I made tacos tonight. Ground beef for DH and black bean for me with rice.

We just finished digging out. I’d say we got about 16 inches. The wind is calming down so hopefully we are past the peak power outages.

I can’t lie I’m exhausted between working and removing all the snow. So I’m making an easy dinner tonight. I’m making pasta (fresh my dad got it at the farmers market yesterday) with meat sauce, salad, and garlic bread.

Last night we had roasted vegetable pita and beef bolognese from Primo Piatto and tonight is ‘Ohana. Our home is in the bullseye of the blizzard. Our amazing sons moved home to take care of everything while we’re in Orlando. Last measurement my son took was 34 inches and it’s still snowing. Keeping everyone in my thoughts…
