What’s for Dinner Tonight?

Texas Shepard's Pie

1 large sweet potato
2 cloves garlic, minced
1 small red bell pepper, chopped
1 small yellow bell pepper, chopped
1/2 cup chopped onion
1/2 cup corn
2 tablespoons salsa
1/4 teaspoon cilantro
3 tablespoons jalapeno, minced, divided
Montreal steak seasoning
chili powder
cumin
sour cream for potatoes
cheddar cheese

Oven at 375º.
Cook potato. Add garlic, 1 tablespoon jalapeno, sour cream. Mash.
Cook meat and garlic in skillet over medium-high heat for 5 minutes.
Add peppers, onion, jalapenos, corn, salsa and spices.
Put in greased casserole dish. Top with potaotes.
Bake, uncovered, for 20 minutes.
Top with cheese. Bake for another 10 minutes.

I learned recently that if you sign up for those free 'memberships' with fast food places and such, don't go to the for a long time and then log on just to see what deals they are offering it can trigger a personalized offer to you. such was the case with the grossly overpriced Panera this week. I got a small gift card for Christmas and went online to see if it could pay in full for anything only to have the site turn around 2 hours later and send me a BOGO for $5 offer so that was enough to cover 2 full size chicken Cobb green goddess salads which dh and I will have with some defrosted homemade soup (we eat LATE a couple of nights a week). yesterday (and lunch today) was actually fast food as well-another small gift card (bonus offer I got for buying one as someone else's Christmas gift) combined with a couple of panda express 'buy a big/get a bigger plate' coupons and we walked out spending less than $1.
 

Last night I went to dinner with my MIL at a place called Eric's Office. I had never been there before and I don't really know why, just never got there. It was really good. I had this soup and it was called Creamy Chicken Apple Brie. OMG It was Amazing!! Then I had a Teriyaki Chicken sandwich and MIL had a Reuben.

Then later when my hubby got home I made him Hot dogs and then French Fries in the Air Fryer.

Tonight we had Honey BBQ chicken strips and mac and cheese.
 
I finally remembered to take the frozen turkey breast out of the freezer a few days ago to let it defrost in the refrigerator. I was not sure I would ever cook it since it was almost 7 1/2 pounds. It was a free one when you spend $400 at the supermarket (offered yearly for Thanksgiving/maybe Easter also).

Not sure if the kids would want it when they do come for dinner. So last night I had turkey breast (with frozen veggies on the side). I also cut some up mixed w/mayo to have a turkey sandwich for lunch today/seems like a different meal. I will be having the same slices/w veggies tonite. Not sure if I will have it a third day/night (have plenty). Hate to waste food so I might freeze some slices for another time.
