It’s quite chilly outside tonight so guess I’ll eat a meal to combat the weather. Normally, that would be a stew or hearty soup but I’m just not that hungry. What fits the bill on this end will be a ratatouille and cheese omelette with a cup of onion soup. Think I’ll eat a clementine or 2 for dessert and get my fill of vitamin C.
baking some goodies for the storm, today is banana bread and a quiche (spinach, Swiss cheese, cherry tomato). Tomorrow will be cake box cookies (spice and chocolate)
tonight's dinner will be Greek chicken and pasta with a tomato sauce.
Quite nasty here in DFW. Sleeted most of today and supposed to really pick up tonight and overnight. Praying for the best. We have potato soup in the crockpot, cornbread in the oven and we made peanut butter cookies today.
We went out to breakfast this morning at Kona.
Met up with bobbiwoz, her DH and her sister.
It was nice to see her. It had been a couple of years.
We skipped lunch.
Dinner was turkey sandwich and a pickle spear for me and chicken pot pie for DH.
We had the Instant Pot Uzbek Plov from Skinnytaste that I started making last night. It was pretty good. It's a beef and rice dish. Probably would've been better fresh and not reheated but it didn't finish last night until 7:30 and we had already had our salmon by then.
New weekend home attendant started work today and she has possibilities. Didn’t cook from scratch today or go out but I definitely see light at the end of the tunnel.
After rooting around the freezer had a change of heart on what to make. Found poached chicken cutlets that needed eating more than the roasted chicky so I used some of that mixed with tomato sauce to cover some spinach and ricotta stuffed shells. Popped that into the oven and sprinkled w/ mozzarella towards the end. Was a nice meal but I’m gonna have to entice D to help me finish the frozen shells; it’s going to take a while for me to finish alone. Had a kale salad on the side and made self a mini Italian gelato soda for dessert.
