What’s for Dinner Tonight?

With cold temps and a wintery mix here in the south, it was time to bust out the crock pot. Tonight's dinner was chicken tortilla soup. It was a bit more watery than I'd like, so I added rice to the soup to beef it up a bit. The boys and I have extra for lunch tomorrow,

Tomorrow's menu is jambalaya and chili for Wednesday.

We stopped in Savannah on our way back from DS's to spend the evening at their dueling pianos venue. We shared a grilled cheese there, then stopped for a couple slices of pizza on our way back to the hotel. As you may suspect, this wasn't the best plan for dinner.

Sunday, we continued on to a jobsite. Dinner was at Yardhouse near the hotel. We shared Cobb salad & Ahi Tuna w/ rice & sauteed vegetables.

DH noticed fish & chips on their menu last night & wanted to return tonight. I ordered spicy tuna stack.

I had a work dinner. Shrimp cocktail followed by prime rib. A really nice old fashioned with Buffalo Trace bourbon as well.

Helped out my friend today…picked up Thai food on the way home.

I bought a 2 pound thing of hamburger meat tonight at Walmart, and we made homemade chili and cornbread. It was cold here today (barely got to 40). So it just sound good. DW loves chili. I'm not a big fan, but I cook it for her. We'll have it leftover tomorrow for dinner too (DW is taking leftover fajitas from lunch yesterday for lunch tomorrow, while I have a meeting with a client. So I'll have to eat out and buy theirs, although I do get reimbursed at the end of the month).

Last night was a brown sugar/garlic/soy glazed salmon with green beans, kimchi, and rice. It was amazing.

Tonight I am making sheet pan chicken fajitas after my hair cut this evening.

I’m going to make sweet potato ground turkey patties and serve with the leftover rutabaga fries.

DH wanted Chilaquiles......I don't care for it, so I am having a good hot dog wrapped in a low carb tortilla.
And probably a green salad.

The weather was weird today we had sleet for hours. We were supposed to get snow that changed to rain.

Tonight I’m making a baked tortellini in a cream sauce with salad.

I just frosted some cookies for a work event tomorrow.

Those cookies look amazing. DW wants leftover chili tonight. We had it last night, but it didn't sit well with me. So not sure I will eat that, but if that's what DW wants, that's what she gets. Happy wife, happy life, right? We do have some leftover fajita meat from Sunday, so I might have that if it's still good. Final option would be a peanut butter and honey sandwich.

Made it home on Saturday just in time to wheeze and dry hack outside of WDW. Fortunately have lots of soup in the freezer and my current favorite is garlic soup minus the croutons.

I wound up eating the chili (a small portion) on crackers with cheese. We'll just toss the fajita meat since we didn't eat it tonight.
