What’s for Dinner Tonight?

We had a Sunday Roast Dinner, albeit a little light on traditional sides - just mashed potatoes and pan gravy with an arugula salad DH bought. Kind of sup-par though because a decent cut of beef is ridiculously expensive so I went with a small (very small - 2lb) sirloin tip, which wasn’t near as succulent as I would have liked and the size made it hard to nail mid-rare.
Honestly, this is why I've stopped buying beef roasts. There are only two of us, but with beef so ridiculously expensive, we really can't afford a big roast, both from a price and a waste perspective. We could do a small roast, but they just don't cook up as nicely and it's hard to get them to cook evenly and to medium-rare. We've given up; if we want a decent cut of beef, we go to a restaurant. It might be expensive, but at least it's cooked properly- juicy, succulent, flavorful.

Dinner tonight was leftover turkey. I thinned down the gravy and made stove top stuffing. I had "hot turkey dinner" with the turkey, stuffing, gravy, and leftover roast veggies, and DH made himself a big ol' sandwich.

We stopped in Savannah on our way back from DS's to spend the evening at their dueling pianos venue. We shared a grilled cheese there, then stopped for a couple slices of pizza on our way back to the hotel. As you may suspect, this wasn't the best plan for dinner. :laughing:

Sunday, we continued on to a jobsite. Dinner was at Yardhouse near the hotel. We shared Cobb salad & Ahi Tuna w/ rice & sauteed vegetables.

DH noticed fish & chips on their menu last night & wanted to return tonight. I ordered spicy tuna stack.
 
I bought a 2 pound thing of hamburger meat tonight at Walmart, and we made homemade chili and cornbread. It was cold here today (barely got to 40). So it just sound good. DW loves chili. I'm not a big fan, but I cook it for her. We'll have it leftover tomorrow for dinner too (DW is taking leftover fajitas from lunch yesterday for lunch tomorrow, while I have a meeting with a client. So I'll have to eat out and buy theirs, although I do get reimbursed at the end of the month).
 
I’m going to make sweet potato ground turkey patties and serve with the leftover rutabaga fries.
