What’s for Dinner Tonight?

I love making recipes with Kielbasa. I was wondering if you used a sauce of any kind on the roasting mixture????
One of our favorites is so super easy and quick and always tastes delicious. Here it is:
I use 1/2 of a kielbasa sausage (for 2). I cut it into bite sized pieces and fry along with some white onions. Then I use a package of Spanish Rice (Uncle Bens is the best) with 2 tbs of water. I add this when the sausage is done. Just stir til warmed up and serve. It is great!
I didn't add anything except some spice and olive oil on the veggies. I briefly thought about adding some tomatoes and making it kind of a juicier jambalaya type dish but was just going for the easy toss in the oven and roast.

I used to make jambalaya all the time when the kids were home, I just realized I haven't done it years.
 
We ended up having Italian take-out from our fav place down the hill. My husband was craving chicken parm and that’s not in my cooking repertoire. I got a side salad & cheese ravioli that are as big as my head, so those will also be lunch the next couple of days.

Tonight. Well, little grandson will be over and I usually make him homemade mac & cheese. I’ll steam up some veggies as well.

Beef Stroganoff, broccoli, salad
Change of plans....DH just got back from a meeting for a group he belongs to and brought a lot of leftovers home.....Pulled Pork and Beef Brisket. So that is for dinner tonight with a salad and some broccoli and a lot of it is going over to DS's house.
The Beef Stroganoff will be tomorrow.
 
Crazy day! My hairdresser and her husband came over for our old couch, loveseat, chair, and ottoman. I had to move the kitchen table because it was easier to go out the kitchen door with the furniture. So I scrubbed the kitchen floor after they left. I then pulled the area rug out of what will be my dining room and washed the hardwood floor. DH went to my bffs and picked up his parents dining room table and chairs (she was storing them in her garage while we remodeled). So I cleaned those and put them out. I’ll need to repaint and get a new area rug but fine for today.

I was dirty and tired so I grabbed Chinese food. I had veggie lo mein.

I’m now relaxing on our new sectional in a recliner sipping a martini and it’s delightful!
 
New home attendant today, nice woman, let’s see how long she lasts. Above is the abridged version and I’m just too fatigued with the situation to discuss the long story for the moment.

Ran some errands today and I’m fortunate that an express bus stops near my house; was in Manhattan in 15 minutes. Harlem has changed sooo much..it’s just mind boggling. Lots of downtown stores have moved uptown and it made my need for a few vacation needs easier to obtain: sunglasses and a just because skirt from Banana Republic, lipstick from Sephora. Bypassed Nordstrom’s Rack because I’d been told they had a hat I’m lusting for on sale and my millinery quota is filled for the summer, lol.

On my way back, noticed a street fair and picked up some goodies before getting on the bus.

So tonight had a fried fish sandwich minus the bread, cabbage smothered with collard greens and a slice of lemon meringue pie. 🎶Ain’t we lucky we got ‘em-good times 🎶
 
Just thought I would share this recipe for kielbasa:

POLYNESIAN SAUSAGE


1 lb. kielbasa or other similar sausage
1/3 cup barbecue sauce
2 T. orange marmalade
2 tsp. red wine vinegar
½ of a medium onion, chopped
½ of a green pepper, chopped
1 can pineapple chunks in juice, drained (save the juice)


Slice sausage into thin rings and sauté in a skillet for 10-15 minutes.
Mix together the remaining ingredients and add to the sausage, along with approximately one-half of the reserved pineapple juice.
Lower heat and simmer for 45 minutes.
Serve over cooked rice.

I made everyone a big breakfast this morning, but didn’t eat much myself. So while hubby and I are out running errands we’re going to have lunch at one of my favorite burger joints. So that will be it for my big meal of the day. Maybe a yogurt around 6pm.
