What’s for Dinner Tonight?

I just had part of a roast beef and provolone sandwich from Potbelly at the Baltimore airport. It was a FAR cry from the wonderful food I had all week in New Orleans, and pretty salty. Didn't bother to keep the rest of the sandwich. One more flight and we'll be heading for a hotel in Portland, Maine.

I made chicken fricassee tonight. It’s a family favorite even though it’s not really a summer meal. I was able to make the whole thing in the Foodi Ninja pressure cooker. And I made some homemade biscuits to go with it.

Does anyone have any cucumbers suggestions? I am having my best ever cucumber year in the garden. I have made pickles (kosher dill, half sour, and bread and butter), tomato and cucumber salad, tossed salad, and we’ve been snacking on them with various dressings.

Tonight is steak and grilled asparagus. I’m going to my neighbors for a cocktail after so I’m bringing over cheesecake (store bought) for dessert.

One pot chicken and rice with peas tonight. We have a lot of cherries in the fridge so we will have those if anyone wants a snack later.

DS wanted pizza tonight. For some reason, he chose boring pepperoni for DH & him to share. DH decided to at least double the pepperoni. I'm having lentil soup & Greek side salad.

Grilled romaine salad with peaches, ricotta and basil. Really wanted it to be endives but no decent ones around and the romaine needed using.

Made a spinach and zucchini omelette for DGD and a spinach and Gruyere for me.

Oh my! My neighbor just gave me probably $600 bucks worth of fresh fish from his deep sea fishing trip. GORGEOUS wahoo and yellowtail. I'm going to marinade up some of the ahi as a appetizer and sear it on the grill. Thankfully my neighbor vacuum sealed it so that it's all easy to freeze.
