What’s for Dinner Tonight?

I believe this is the 16th weekend in a row we have had rain and it’s 60 and raw out. I was planning to grill but the weather had other plans. I regrouped with one pot chicken and rice with roasted asparagus and um making strawberry shortcake for dessert. The strawberries and asparagus are both from a local farm.

I got out in the garden today to weed and I have lots of peas so tomorrow I’ll be making something with peas.

Had local BBQ from one of our fav places. Smoked turkey, bbq beans, coleslaw and cucumber salad. Yum!

It was downright chilly here all day. (Long Island, NY) I was wearing a sweatshirt in the middle of June. Its weird!
It was perfect weather for the Tomato tortellini soup. It turned out really well. I served that with paninis. Everyone got to choose their meats, cheeses and condiments. I personally opted for an Italian panini.

Happy Anniversary!!! I wish it was hot here. 10 degrees below average. Only hitting 67ish maybe for an hour or 2.
But of course it will feel like summer while I’m at work this week.

Tonight is Chicken Strips and Fries. Too tired, stressed and feeling sick to do much else.

Dh requested chicken cutlets and potato salad. I’ll probably make roasted broccoli with that. He also wanted a chocolate macaroon tunnel cake so dd and I made that this morning.

Leftover Italian meat deep dish pizza from yesterday's lunch.

We had chicken Cesar wraps for lunch. For dinner we are having burgers, beef for DH and black bean for me with pasta salad, and cut up watermelon. Strawberry shortcake for dessert.

We had a big lunch for Father’s Day. My sister made salmon with pesto and panko and green beans. I made mashed potatoes bc I was asked to. Haha
So probably just a snack for dinner.

Spent the day at the Schomberg Center and I’m pretty much brain tired but in a good way.
Had a a lovely dish of sautéed shrimp dusted with chickpea flour, a green salad and a glass of rosé.

Last night started my hubby’s 60th bday extravaganza! A bunch of friends came into town. We grilled steaks and chicken on the deck with salad and garlic bread. Dessert was carrot cake and key lime pie.

Today is the big day, so we’re catering in from one of our fave BBQ places and a large charcuterie from wine works. I still need to get him a cake!

Tonight will be Swiss chicken with leftover corn on the cob, broccoli from the veggie tray

We spent the past three days driving. Our meals were less than exciting to stay the least.

Friday - After our first long day of driving, we arrived at the hotel late. We drove around in an attempt to find something I could eat, but gave up. We were too tired to put the effort into it. I decided to make turkey wraps in the room.

Saturday - We had a late lunch. Dinner was a shared Ahi Tuna bowl at our hotel for the night.

Sunday - We finally arrived at our home for the week last night. After the third day of driving, we decided we didn't even want to attempt to find an open restaurant. So, we stopped at Walmart & picked up shrimp cocktail & crudites. I added some hummus I already had & that was our late dinner.
