What’s for Dinner Tonight?

Have a few home repairs to do so it was off to Home Depot to buy supplies. Took until the early afternoon to get back in the house so really wasn’t much time to cook.
Opted for a pantry dish of chickpea meatballs poached in tomato sauce, Spanish style. Made a green salad with grated cukes added and doused with lemon juice. Easy meal that was ready fast and would’ve been great to eat on a terrace. Instead I stared out the window watching the air traffic go by while blasting Sly and the Family Stone albums; it’s a good life.
Once again, I'm sitting here wishing I had your culinary skills.
 
Tonight might have been my favorite meal of the week!

Breakfast: veggie omelet with fruit
Lunch: clam chowder, Cesar salad with shrimp, and coconut cream pie with French martinis
Dinner: seared scallops, lobster thermidor with veggies, fried cheesecake with Sauvignon blanc

Having a glass of sparkling on the balcony, I’m not ready to return to reality!
 

That sounds amazing. We love trying Chef's Tables.
I’m really excited to try it! They are switching the filet for seafood for me but DH is getting the menu as is. I’ll report back. 😊

The meal comes with wine pairings and if you don’t want wine they will do cocktails or mocktails.

I will get to the Salsa chicken.....but so tired with stepping in helping DS's family.
DIL will be in the hospital for 4 more days. DS gets colonoscopy tomorrow.....so I pick DGS up at Sports camp today and take him tomorrow morning while DH takes DS.
Then I have a chiropractor appointment, then we have an appointment to get our Trust done (about an hour away).
And because DD came home from the cruise with Covid and DS won't be able to drive I need to pick DGD up and then pick up DGS at Sports camp and take them to Ninja Warriors and Trampoline.
 
Good price on whole organic chicken this week so I roasted one and used some of it to make a chicky salad with roasted Brussel sprouts and tomatoes on a bed of shredded raw Brussel sprouts. Made a Caesar type dressing with lemon juice, Pecorino Romano, minced garlic, s+p, and olive oil. The dressing really made the dish.
 
I've really been missing pasta. Since we're hitting the road again & restaurants don't seem to offer whole grain pasta, I searched for a low calorie/ heart healthy pasta recipe. I came up with one that has whole grain penne pasta, chicken breast, parmesan cheese, light cream, spinach, sundried tomatoes & Dijon mustard. It's probably not the best choice, but I can only go so long without pasta. :p
