What’s for Dinner Tonight?

Busy weekend was a blur. Saturday I did manage to pick up my annuals for the front flower bed and replacement shrubs for the side of the front steps. Also might have picked up yet another hydrangea to replace a different variety that isn't happy with its spot and has underperformed the past two years. That and other errands didn't leave much time for making dinner so I cranked out a BLT for DH and scrambled a couple eggs with toast for me.

Yesterday was parent errands and chores, but I did manage to make a very tasty batch of beef burgundy. Apparently the smell really carried because I had a couple windows cracked to air out the house and two neighbors actually asked DH what was for dinner. Luckily the end result managed to live up to the aroma.

Today I'll just bake up a couple pieces of cod with lemon and some breadcrumbs, season up some jasmine rice and sautee some squash and zucchini.

I had to stay home today, since I could barely get out of bed. I had a BP check up today that was scheduled a couple months ago. So glad I had it bc Dr. gave me 800mg Motrin and a muscle relaxer. DH had to go to Boston today so who know when he’ll get home.
So easy peasy spaghetti and meatballs tonight.

Had a quick dinner. TJ’s Mac & cheese and a bagged salad. We’re on grandbaby watch, as our DIL is in labor and we’re figuring out when we are going to head out their way!

Made stir fry with pork belly and the last of a variety of veggies: ratatouille, pea pods, and asparagus.
Added a few shiitake mushrooms just to see how it “played” with the other veggies. Tbh, the texture was fine but the taste was too strong. Maybe a milder ‘shroom next time.

Well my luggage is packed excepting a few last minute items for the toiletry bag; do that Tuesday morning. With time on my hands, decided to get my nails done. Maybe gels just for the novelty. Last week I bought “minimal makeup” from Sephora so why not let the fingertips join the , lol.

Another busy day......we won't get home until around 4 (seminar DH wanted to go to on wills and trusts).....so BLTs for dinner with peaches the grand kids gave us after their trip to the peach farm

I just tossed some chicken in the crockpot with a sort of Italian sauce made of melted butter, a bottle of zesty Italian dressing, and a little touch of hot sauce. I'll serve it with rice and some lima beans on the side.
