What’s for Dinner Tonight?

No GS this weekend. Just my Friday friend commitment. No idea what dinners I’ll plan for the weekend. I’m contemplating heading over to Knott’s as it’s last weekend for the boysenberry festival! 🍇🍗👩🏼‍🌾
 

Tonight was out with work, so went to a Mexican place called Crazy Pedro's which does fantastic frozen margaritas and pizza. I had a huge slice of their Kimbo pizza (lots of different meals including smoked bacon, pulled pork and chorizo, topped with a Kimbo chilli sauce), washed down with a black raspberry & pineapple frozen marg 😋

Pizza night here as well. We went with the standard pepperoni pie and a chicken Parm pie. Never had that one before and it was delicious. (But pretty pricey for a pizza-$32.) Dh is tired of pizza so I picked up some of the pernil and yellow rice at the deli next to the pizzeria for him.
 
Today is the Friday before our Victoria Day long weekend. On long-weekend Fridays, my company closes the office early and brings in lunch for everybody. There's always way, way too much and the left-overs are up for grabs. Today's haul, which I brought home for supper, was subs from a very popular Italian deli along with side salads and desserts.
 
Family lunch day......enchilada casserole, chicken enchiladas in white jalapeno sauce, veggie tray, strawberries and DD is bring an ice cream cake for dessert.

So,.....not sure about dinner. Leftovers (but each child will probably take one of the dishes home since they were their choices).

Adding...forgot to mention tortilla chips and salsa

To the best of my knowledge I’ll be eating the last of my already cooked roasted tomatoes tonight.
Using them to make curdled eggs, ham, green peas and tomatoes. Have some scallions that need using up so will add the minced green tops after the eggs are cooked.

It’s a French version of scrambled eggs: very creamy, very soft with small curds. They serve it for lunch or dinner, rarely breakfast and like an omelette it has various meats and veggies are added.
I make it about once a year because it’s very rich with about half a stick of butter.

I never think of the name with anything but good connotations but know what you mean, lol.

:idea: Sounds like something the lesser-elegant of us would call a pan scramble. :oTruth be told, many of my intended omelettes end up that way due to my very weak folding/flipping game. You lost me at "creamy" though; I can't stomach wet eggs.
 
Monday - It was raining, so I talked DH through making homemade chili & cornbread. He knocked it out of the park. That may have been the best chili we've ever had. :poop:

Tuesday - DH & I both had a cup of spring vegetable & tortellini soup & shared Marry Me Chicken pasta.

Wednesday - We shared Carpaccio, Salmon w/ mashed potatoes & balsamic mushrooms & bread pudding w/vanilla bean ice cream.

Thursday - Sub sandwiches late night at the hotel.

On top of my other issues, I've recently had a crazy acid reflux flare-up. Our meals are going to be limited & bland for awhile, while I try to figure out what's going on. This is going to be a challenge for two people who like variety, spice & heat. Wish us luck.

Friday - Brown rice w/chicken & black beans.

Tonight - I'm going to throw together some pasta, stir fry veggies & shrimp w/ a little olive oil, salt & pepper.
 
We just got back from a local nursery and went nuts with plants. It’s an obsession…but there are worse vices to have. 😆

Anywho, we stopped for a late lunch at In N Out and that might have been dinner for me as well. I have a Margherita pizza I can throw in the oven for hubs if he gets peckish later on.
