What’s for Dinner Tonight?

Stepped away from the defrosted provisions and embraced some canned goods to make “crispy artichoke heart with tuna and lemon zest rigatoni” courtesy of the NYT. Played with the recipe to make it my own and use up some goods in the fridge.
Hubba hubba! I’m gonna remember this one.
Please, share the recipe. I'm always up for trying something new.

Add the tuna in step 5 after the pasta water has simmer down a bit. I use chunk tuna packed in olive oil (Progreso or Genovese (sp?) are well known/national brands) or tuna packed in glass jars. If you want, add the lemon zest at the same time. And if I wasn’t observing Lent, pork products (cooked bacon, pancetta etc) would make a fine addition, I think.

Spaghetti squash spaghetti.
I’ve been jonesing for pasta and ate some “fake” noodles last night and regretted as they weren’t worthy of the rest of the dish. Thanks for the reminder as spaghetti squash is going on my shopping list 😎👍🏾

Back to the freezer goods. Found a soup base feauturing cannellini and black beans and added the rest of the artichoke hearts, kale and cut up asparagus to it.

Thanksgiving night sandwiches. Roasted a turkey breast, made stove top stuffing, made gravy with the pan drippings, made instant mashed potatoes. it's a tough life sometimes, when everyone is working. HOWEVER... the gravy is good and will cover the multitude of sins brought on by the packaged stuffing and potatoes. They have the option of cold or hot sandwiches. I'm still at work.
 
No idea what’s for dinner! It hasn’t been a good day! Drove my husband 40 mins to his surgery. Went to check him in and they looked at us like we were crazy. “Uhm, that surgery was canceled for today.” ***.

Just getting back home. Need a glass of Chardonnay. Called Dr office. It’s a cluster. I’m now advising my husband get a second opinion, with a different orthopedic surgeon. < for context, I’m a retired RN >

@WorldWacky - maybe steak and eggs 🍳 ? People enjoy a hearty breakfast before breaking camp ⛺😎
I would have loved steak and eggs, BUT we used up all the eggs the day prior so we wouldn’t have any leftover to travel with. 😂 In the end, we kept the steaks on ice to take the short trip down to dd’s school. They’re in the fridge here at the hotel and we’ll just make sure we keep them on ice for the long ride home tomorrow. The two separate “neighbors” across the street at the campground were also packing up so they weren’t an option. And the person working in the office was a teenage girl, so we just hung onto them.

After we packed up, we went over to the Hocking Hills Lodge for lunch. It’s a beautiful resort that totally gives Disney resort vibes. I had shrimp and grits, dh had their brisket chili and dry rubbed wings. The grits were a bit bland, but the shrimp were cooked perfectly. Dh’s chili was the winner. It was SO good and I was jealous.

For anyone who likes hiking. (None of the hikes were terribly difficult. The hardest ones involved A LOT of uneven staircases.) I couldn’t recommend Hocking Hills State Park more highly. It is so well maintained and an absolutely beautiful little gem here in Ohio.

Dinner last night was terrible Domino’s pizza, a really good homemade pasta salad and strangely, an eggroll, at the lacrosse tailgate.
