What’s for Dinner Tonight?

Tonight will be homemade lasagna, salad, bread, red wine, and a pumpkin pie for dessert. Tomorrow will be a repeat of that meal.
I'm thinking that is next on the "radar" after the pot roast is done (it is a small crock pot)!

I'm buying a Carando spiral ham later today for Christmas brunch 1.99 lb wow. Also found a recipe which uses cottage cheese mixed with an egg (forms a crust) and sausage (I'm buying good turkey sausage today) with cheddar on top, baked in muffin tins for brunch as well. I'll wait on the cut fruit, but I think next week sounds good to start baking pumpkin bread (I'll use real molasses) and cookies! Maybe I'll need to use up a frozen pizza or two before Christmas so I'll have room in the big freezer for baked goods ha, ha!

I pulled a variety of leftovers from the freezer to defrost so there's choices of-

guiness stew
cottage pie
chicken mole (with tortillas to make burritos)
pasta with marinara.

I was putting away Thanksgiving leftovers and it helped make room-i'm already planning on pulling some precooked but as yet unsauced shredded beef for 'pot roast' and pasta one night this week and big chunk of the mutant pork roast dh bbq'd in warmer days for pulled pork sandwiches another night.
 
I barely remember what we ate this week, it was so crazy; four adults going in 4 different directions while juggling an 8 year old. Let's see...
Monday was DD's potato leek soup, which I bashed and then had to eat my words- AND the soup, it was delicious!
Tuesday... I got nothing. I am sure we ate, just don't know what!
Wednesday SIL made sausage & peppers rustica, and it was pretty good.
Thursday we had... free for all? It was supposed to be stouffers mac-and-cheese but it hadn't thawed and nobody was home long enough to bake from frozen (it takes soooo long). DH and I worked until 9:30, SIL was at band practice, DD and 8 year old went to the 4:45 show of Moana2. OH I KNOW... SIL took himself out to dinner, DD bought take-out Thai for the rest of us.
Friday- Stouffer's mac-and-cheese with broccoli, that we were supposed to have on Thursday. Mac&cheese is my favorite food (not necessarily stouffer's but it'll do) and as I was in a car accident yesterday and my car is probably totaled, I ate way too much mac&cheese last night.
TONIGHT? No clue. DD is in Nutcracker so she is already on-site, rehearsing and preparing for tonight's production; it's opening night! She took her dinner with her. SIL is working on their new house, 8year old is at a family dinner with his grandparents and relatives. We are picking him up at 5pm to go to DD's show tonight, which is at 6:30. We'll probably end up doing McD's drive-thru as the timing is all off, the show is an hour's drive away, and it'll be too late to come home and eat after the show.

MAN... we are really uninspiring. We need to get a menu together and start eating like normal human beings again.
 

Coming to the end of my make ahead vacation meals. Tomorrow, I’ll make gingerbread in a charlotte cake mold and then sit down and re-check the menu. Need to wash the windows; not so much that they really look dirty but just the fact that I won’t be here for the start of the New Year. Superstitions.

Had a bowl of the Thai coconut curry soup with chicken I made earlier this month and I’m not really happy. Should have paid more attention to the brand of coconut milk I used or just switched to coconut cream. I’ll get some coconut cream tomorrow and play with the remainder.
 
Cookie madness is full on. I made a double batches of 3 kinds of cookies. I made whipped shortbread, thumbprints, and peanut butter cup cookies.

For dinner we had pasta with meatballs and salad. I had premade the meatballs so it was fairly quick to make after all the baking.

I also booked a cruise today so that was exciting!

@LoveDaisy Thanks for your good wishes. DH and I are ok, just bruised from the seat belts. It's uncomfortable but we are find. Also, your cookies look AWESOME.

Tonight supper was one of those "who knows" things, but we sidestepped by going out for a late lunch (around 2:30). A local restaurant does daily specials, and Saturday's special is steak tips sauteed with onions and mushrooms, with dinner rolls and choice of 2 sides for $14.99. That's a pretty good deal, we got a good meal, and there weren't any dishes to do when we got home from Nutcracker (at 8:45pm). We got the 8 year old a happy meal plus a cheeseburger on the way home, and DD/SIL are about to order a pizza. We gotta get our acts together around here!
 
Baked 2 more kinds of cookies today. That brings me to 6 kinds and about 650 cookies. I still have 2 more kinds on my usual list and then I like to try something new. No idea what the new one(s) will be.

Tonight I made a chicken pot pie with rice and a salad.

All of the cookies look great, LoveDaisy. I’ve been baking away as well. Yesterday, I made S’mores Cookie Bars, Coconut Macaroons(which only use egg whites), and Butter Cookies(which only use egg yolks). They’re my “partner cookies.” I make them on the same day to not waste the eggs.

Since the oven was being used for baking, dinner was Triple Pork Black Bean Chili from AverieCooks.com. First time making it. It was really tasty.

Today I went over to a friend’s house to bake with her. We knocked out the Big Chocolate Chip cookies, Buckeyes, Peanut Butter Blossoms and some Coconut Macaroons for her.
(Lunch/Dinner was snacking on cheese & crackers and mimosas.😁)
 
Visited the Metropolitan Museum’s crèche display which is an annual event that always puts me in the right mood. Back over to my old stomping grounds on the Westside and ran into a nabe who walked us down to Zabar’s where we ended the chat at the junction between the smoked fish and deli sections. She went right and me, left in our hunt for just the right nosh.

Nice way to spend the day and I bought some poached salmon with watercress sauce for a leisurely dinner.
 
Stopped in a local market and bought some frozen grated coconut and by adding hot water made some thicker than normal coconut milk. Just what was needed for a too thin coconut soup I’d made last week.
So a bowl of the repaired “tom kha gai” will be on the menu tonight with the rest going into the freezer.
