What’s for Dinner Tonight?

Trying to use the last bits and bobs before I shop on payday. So, the last few days - hamburger gravy (last can of cream of mushroom from LAST holiday season), over mashed potatoes made with the last of the yellow potatoes. Made some steamed broccoli alongside.

Yesterday, I WFH, so I used the last can of crushed tomatoes, the last container of beef broth, almost the last of the russet potatoes, then bits from other veggies and 2# of stew meat from the cow we bought 2 years ago, and made all-day stew. Served with rolls.

Tonight will be the last of the eggs over the last of the english muffins, with hollandaise. Will make hashbrowns with the very last of the russets. And I have a pineapple that needs to be cut up, so that will be alongside.

I am enjoying the challenge of not just buying more to buy more....actually using what I have.

We have a large pantry in our basement, and the door broke off. So, I am figuring since I have to gut it all to move it, redo the door, I am going to actually start using it up. Here comes rice in every meal, and tons of beans, ha!

ALSO - Amazon Fresh has had their frozen turkeys 75% off for the last few days. Check it out if you have it - I got 4 giant turkeys for 5.88 each or so. Spent just over 20$.
 

I am in charge of decorating for my oldest son's cross country banquet that is in 2 weeks. I had the other ladies from the planning committee over to my house last night, so it was baked ham and cheese roll-ups and potato chips. Super quick and easy.

Tonight I am working at our school literacy night. I put a roast with mushrooms and carrots in the crock-pot this morning. It will be served with the Bob Evans mashed potatoes you find in the refrigerated section.

I love oriental chicken salad so tonight I will try the AsianSweet Ginger and this weekend the Teriyaki .

Better than ChikFiLa tenders,.. and my son worked for them making their biscuits every morn once upon a time . Haha

I’m going to take elder sister’s advice and buy some. She said they were on constant re ordering when her grands were visiting. So you’re in good company!
 
Second batch of ginger cookie dough (1/2 recipe) for the freezer.
Divided the half into quarters so that some can go to my sister’s Thanksgiving celebration and the remainder is for Christmas.

Had a bowl of Lipton’s chicky noodle soup with extra parsley, broccoli and peas added. Old fashioned yum.
 
After a very stressful visit at the hospital with dad we took my mom out to to dinner. Tomorrow night is comfort food....pot roast in the crock pot over mashed potatoes. We are at the point about talking about moving in again. It's a lot. So it's nice to just focus on the menus for now.
 
Tonight is tacos ... ground beef with the Old El Paso seasoning mix for the meat eaters, black bean for the vegetarians, and assorted chopped lettuce, tomatoes, olives, cheese, sour cream, avocado, corn, and both soft and crunchy shells.

Wednesday is usually our takeout night, but we've been trying to scale back on that a little and make sure we're not wasting food by having too many leftovers that we eventually have to toss, and by using our produce up before it goes bad!
