I just got home from girls weekend. So much fun, always one of the best weekends of the year. I’m exhausted so I picked up Chinese takeout on my way home.
We went to 6 vineyards. The highlight was the Sparkling and cheese tasting.
DH made a chicken stock Friday night from the roasted chicken we had that day. Yesterday, he used the stock to make Italian Wedding soup with ground chicken/sweet sausage mini meatballs. Tonight we had the soup and Cuban paninis made with last night’s roasted pork leftovers.
Oven roasted pork ribs with rice, stewed beans, and broccoli. DD is basically vegetarian these days so I try to include something substantial for her dinner, hence rice and beans.
First time in a long, long time - I cooked a proper Sunday roast dinner. Roast beef (2.2lb sirloin roast = $31.00 ) with horseradish, homemade gravy, mashed potatoes, Yorkshire pudding and carrots and peas. A heavy meal served early - it was extremely enjoyable on this cold autumn day.
Busy day and decided I wasn’t cooking when we passed a Japanese shop. Bought some miso soup, seaweed salad and sashimi.
Hope to munch on it in an hour or so.
Stopped at Eli EATS on the UES and bought some meringue shells and pomegranate syrup. Will make a dessert by adding a poached pear and clementine segments to the other ingredients.
Chicken Spinach Alfredo with tonight. Totally cheated with jarred sauce that I just “zhuzhed up.” Reheated some garlic knots we had in the freezer to go along with it. Certainly not as healthy as NYCgrrl’s desserts, but I made chocolate/raspberry brownies. (I do want to try my hand at poached pears now.)
Firecracker Casserole......new one to us.
Ground beef with onions, black beans, chili powder, cayenne, Rotel, cheese and tortilla chips (may be something else...can't remember off hand)
