Woke up this morning with very clear intentions: make a batch of pie crusts and store. That didn’t go too badly and it’s amazing how easy they are to make in a food processor.
By 10:30 was ready for the next step which was the making of ropa viejo, a Cuban beef stew, that I decided to use as filling in a pie crust. Uh oh, wrong meat was defrosted, stewing beef not skirt steak. Sigh.
Okay so about 1/2 the package became beef bourguignon and fortunately I’d all the ingredients including the salt pork(!). I’ll portion and freeze that tomorrow but still have between 2 and 3 lbs of meat left that I haven’t decided what to do, what to do. Oh well, tomorrow’s another day.
Could have turned the deboned Cornish hen meat into a pot pie (I’ve that dish on the brain) but I’ll do that Sunday or Monday.
Heated a white bratwurst in the toaster oven with some Swiss chard, added pickles and a hot mustard and a fast dinner was had.
