What’s for Dinner Tonight?


We're both being lazy & decided to bake frozen pot pies.
Similar thoughts. Decided last night to make pot pies for the freezer 😎
To this day, every US military mess hall around the globe serves it.
The man was a cook (don’t remember his title) during ‘Nam and when I first met him frequently made it.
 
Woke up this morning with very clear intentions: make a batch of pie crusts and store. That didn’t go too badly and it’s amazing how easy they are to make in a food processor.
By 10:30 was ready for the next step which was the making of ropa viejo, a Cuban beef stew, that I decided to use as filling in a pie crust. Uh oh, wrong meat was defrosted, stewing beef not skirt steak. Sigh.

Okay so about 1/2 the package became beef bourguignon and fortunately I’d all the ingredients including the salt pork(!). I’ll portion and freeze that tomorrow but still have between 2 and 3 lbs of meat left that I haven’t decided what to do, what to do. Oh well, tomorrow’s another day.

Could have turned the deboned Cornish hen meat into a pot pie (I’ve that dish on the brain) but I’ll do that Sunday or Monday.

Heated a white bratwurst in the toaster oven with some Swiss chard, added pickles and a hot mustard and a fast dinner was had.
 
Made beef curry in the pressure cooker with the remainder of the stewing meat. Added frozen ratatouille at the final 2 minutes to keep from overcooking and to use the last of the veggie stew; it’s official- none left in the freezer.

Going to have the curry for dinner over cauliflower instead of rice. Maybe pop some naan in the toaster oven to go with it and have some fresh mango slices for dessert.

CUSINART should just do it for TV commercial. Basically only reason I still have it around. Use ninja most of the time for other pulsing prcosessing tasks.

Tonights menu is pulled pork and chicken. The
last few times I have made them together in same pot to give option at dinner. Has anybody else tried?
I ussually use the same recipe for sause so really makes no difference to cook together.
