What’s for Dinner Tonight?

Taco night! I'm cooking, so I'm making them with ground beef, which is what I like. However, there is a leftover chicken breast from Sunday's Sam's chicken (that I made into soup, DD has an ear infection and a bronchial virus and wanted "Mom's garbage soup), so if anyone wants chicken tacos, they can heat up the meat from Sunday.

Trying hard to continue emptying the fridge and freezer but difficult when fresh produce beckons. Sent my home attendant to the store to buy one avocado but she came back with three because they were on sale. I like that she thinks about sale goods a lot but what to do with them?

So the answer to the question was to use a recipe I rarely do: avocado-cucumber soup.
Going to have to finish it by tomorrow but it’s tasty enough that I don’t care. Added some shrimp sautéed in smoked paprika cradled in lettuce leaves atop and it made a lovely summer meal.

Almost nothing better than watermelon on a summer day. One of my favorite foods. Wish I would have bought one when I did the shopping today.

Tonight it’s homemade pizza. We’re breaking out the Ooni for the first time this year. Two mediums, one pepperoni with extra cheese and one bbq chicken.

Hot Dogs (the fat ones) split with cheese stuffed inside and wrapped in crescent roll dough. Steamed (an heirloom, Italian ?) squash (the first one from the garden). oh, and a little left over guacamole(!) and chips.

Salmon tomato basil wrapped in foil and cooked on skillet for 8 minutes, served with lemon and rice

last day here at the Airbnb, Headed home tomorrow morning to get home in time to meet DD for lunch for Father's Day. Sadly DS's family has Covid, so they won't be joining.

So.....leftover what ever we still have in refrigerator and freezer, which is some tater tots, some salad, some taco meat. Then we also have a couple cans of soup.
We are going out to lunch....today is our anniversary
