DH decided he wanted one more "country cooking" meal, before we left the area. He had fried catfish, French fries & corn nuggets. I can't handle that much fried food in a single meal, so I ordered country fried steak w/gravy, mashed potatoes & collard greens. We have enough left for lunch tomorrow, before we hit the road again.
The plan was grilled ribeye and roasted brussels sprouts and carrots, but I'm too tired to dink around with the grill so just the roasted sprouts and carrots.
Well, got little accomplished today that I planned so went back into the freezer and pulled out some turkey chili, rice and broccoli florets.
Really wanted to make up the fish quenelles but my home attendant was running late so I told her not to bother coming in and we’ll start again tomorrow.
Friday nights tend to be build your own pizza night around here. Cauliflower crust for hubby and naan crust for me. Think I’ll jazz mine up a bit with leftover smoked brisket.
Hoping I can convince DH to grill some burgers, or turkey burgers, or portobello burgers, truly don't care. Just don't have it in me to do much beyond a quick slaw and steaming some broccoli tonight.
Pulled some beer batter fish filets out of the freezer and added rice, leftover coleslaw and broccoli florets to the menu. After baking the fish added some mirin atop and placed the veg and starch on the plate.
Ate pineapple for dessert.
Yesterday was family lunch day (first pool day), so we had a variety of meat, cheeses, rolls, chips, coleslaw, pineapple, strawberries, blackberries. Double chocolate cookies, sugar cookies and Brownie Brittle for dessert.
