What’s for Dinner Tonight?


DH is smoking salmon so the two of us will have that for dinner unless it’s terrible. We are new to the smoker and this recipe called for brining overnight and then smoking for 24 hours. Seems like a lot of time for fish! I love smoked salmon though so looking forward to trying it. Supposed to be done around dinner time. Sides will be salads. He has a spring mix and I have some micro greens. He will also have bread and butter and maybe some Mac and cheese. He likes Mac and cheese with fish and eats “butter bread” almost every night.

Middle DD was already planning to be out for dinner and once youngest DD hears the menu I am thinking she will also make other plans. 🤣
 
Marinating chicken in mayo, fresh basil and hot cherry pepper with brine. It’ll stay there until tomorrow.

Tonight it’s scallops with brown butter served with a radish and cucumber salad that I’m making up in my head. Gotta use up the fresh produce.

Yum! Scallops are my favorite seafood.
 
We are having a few friends over for DH birthday. We will serve the following:

Apps:
Cheese plate
Bacon wrapped scallops
Roasted strawberry whipped ricotta crostini

Entree:
Hamburgers
Turkey burgers
Hot dogs
Green salad
Potato salad
Pasta salad
Watermelon

Dessert:
Death by chocolate cake
S’mores
 
Going to the dine-in theater for lunch today. Will likely have junk food like chicken tenders and fries with gravy. Tonight we are meeting our kiddo and girlfriend for dinner at a pizza brewpub so more junk and some yummy beer flights.

Back on the healthy eating track tomorrow. Maybe.

I ended up taking some sausage and peppers out of the freezer for DH and I will some some Real Good chicken strips. And we'll use up a bunch of salad stuff.
 
DD was going to make coconut lentils for supper tonight, but she has the beginnings of a chest cold and laryngitis, so she is NOT cooking. I am in the process of making chicken soup from a Sam's rotisserie chicken. I keep veg scraps in the freezer for soup broth, so that's simmering away. Once the stock is done I'll add onions, carrots, and celery. Everyone can add chicken to their own dish- or not. There'll also be rice that folks can add, a salad, and some crusty rolls. It's grey and rainy here, and DD feels lousy, so this seemed to be the logical supper for tonight!
 
I am hoping to go strawberry picking this morning. We are expecting rain later today and the farm for picking opens at 8, so hoping to squeeze it in before the rain. If I’m successful I’ll be making strawberry everything later today. 😂

Edit: While the local weather person told me there would be no rain until late morning. The skies opened up and it poured while I was driving to pick up my dad. No strawberries today.

Tonight I’m going to make stir fry with shrimp, carrots, broccoli, peppers, and peas. I’ll probably serve it with rice. This will help me clean out my produce drawer and use snow peas from the garden.
