What’s for Dinner Tonight?

Thank you. I've actually long accepted the situation. Things are just a bit of a pressure cooker right now given the demands that have come along with the serious decline in health of my inlaws and my mother, simultaneous to the situation with my brother completely poisoning my relationship with my mother. I've stopped papering over the situation and have made it clear what I will and won't do to help going forward.

I’m headed out to the grocery store. Nothing in the fridge or pantry to make a complete meal. I’m thinking lemon chicken pasta. Something fresh and filling.

We have our youngest son staying with us until he ships out on Sunday for 8 months. Gotta give him all of the homemade favs!!

Gotcha! I love meatloaf. I read your post as meatloaf salad & had to look to see if I was missing out on something. There actually are recipes for it, so apparently it's a thing. They lost me at maple syrup, but I'm open to changing my mind. Let us know, if you try it. :laughing:
Wow I’ve never heard of meatloaf salad. I’ll check it out. I sounds gross though. 🤣
 
Salisbury steak, mashed potatoes (Instant) and bag Cesar salad. I used the leftover braising gravy from a meal earlier in the week to do the steaks. I am looking for a good Salisbury steak recipe, though. I've tried twice, and they are pretty "loose" and fall apart in the pan easily. Even so, dinner was pretty tasty!
 
Still eating Lenten meals as much as possible despite not being at home. My BF thinks I’m crazed for giving up meat as she’s a real meat and potatoes person.. it’s cool, we still love each other, smile.

So last night I had a large green salad and today we’re off to the local Rewe supermarket to stock up on supplies as I expect to be here for another week.
 
Last night was my last on my own so I wound up just mixing a quick tuna salad because I actually did some cooking for the inlaws after ducking it all week. Made a sizeable batch of spaghetti sauce to portion off and freeze and pulled out some of the chicken I recently roasted and also some of the stock I made to pull together a large pot of chicken soup. I'll pick up some pastina this weekend to add to it so I can get that set for their freezer as well.

DH is home tonight so I planned salmon with parsley potatoes and asparagus. Not sure if I'll go lemon dill or miso maple with the salmon, but I can sort that out last minute.
 
Going to start cooking dinner in a little bit.
It’ll be swordfish cooked in salsa minus the taco shells with sliced avocado and hearts of palm . Serving in pita for BF as I didn’t see any tortillas and atop a bed of green salad for low carb doing me. Too many “crazy women” in the house for her hubby; he’s gone to visit his parents so we can whoop it up like old times.
