What’s for Dinner Tonight?

Got in from our ride home about an hour ago. Even though we had pizza last night, DS requested NEW YORK pizza for tonight. 😂
There really is a difference, so I’m all for it. DH will order spaghetti, chicken and broccoli in garlic and oil.
DD is waiting at the Newark airport for her (new😒) flight. She was so engrossed in finishing a paper while she waited at her gate for the 3:25 flight, she didn’t see that the gate had changed. Totally missed it. So now she’ll be catching an 8:00 flight. Thank goodness they were able to get her on that one! 🤞🏻
 

Got up this morning and made the boys chocolate chip muffins (from a mix) and put the turkey carcass, veggies, and herbs in the crockpot for turkey stock.

I’m going to make some cookies later and then turkey tetrazzini for dinner.

The last of the turkey will get frozen along with the stock for turkey noodle soup at a later date.
 
Soooo tired today. I waited up to make sure DD’s flight wasn’t canceled last night. She landed at 12:15am and then I stayed on the phone with her while she took the 30 min. Lyft ride back to her dorm.
It’s football day around here, so DH has wings defrosting for buffalo wings and I’ll make roast beef sliders with Au Jus for dipping for dinner.
 
We had baked Mac and cheese with a green salad and a baguette from the local bread place. I also had a bag of seconds from when I went to the apple orchard on Wednesday that I needed to use so I made 2 apple crisp pies and dropped one off at my parents. We will have the pie later.

Busy in the kitchen today.

Made cranberry curd with the leftover berries; no true idea what I’ll do with it just happy it didn’t wind up in the garbage as waste-hate when that happens and now I’ve more time to think it thru. Amazing color!

Must’ve had a Techno color daydream. Made sugar cookie dough with freeze-dried fruit.

Dinner was a reimagining of BIL’s red snapper stuffed with Swiss chard and aromatics from T-Day. Added scallions, Brussel sprout leaves, ginger and a pepper medley to the bottom of a pan and steamed with the fish in a sling.
Oh my word! It was a totally different dish and the fish wasn’t over cooked; will try this again for sure.

No dessert but I did have an after dinner Armagnac cause I felt chi chi, 😂
 
DD is making potato-leek soup. I am not a fan at all, but somebody besides me came up with an idea, and somebody other than I will be doing the cooking, so I'll shhhhhush up and eat it!

ETA: I have to eat my words. DD made a very lovely soup, thick and warming, full of carrots, leek, potato, and onion- she even used up the end of the gravy from Thanksgiving as part of the soup. It was delicious, and just what I needed after a long, tiring day at work (didn't get home until a little after 8pm).
