What’s for Dinner Tonight?

Stir fry chicken and vegetables with rice. I found my favorite sauce at the grocery this week, so I picked up a bottle. I have enough leftover for dinner tomorrow night as well.

One of my comfort meals is browned ground beef, over rice, covered in stewed tomatoes and some lemon pepper seasoning. It was one my grandma made for my mom, and she for me. Your meal made me smile :)

Tonight - if the kid-at-home remembered to take out ground beef for me, I will make a pot of chili. If he forgot, it is refried bean and onion enchiladas.
That comfort meal sounds delicious.
 
I needed a quick supper so made a pot of spaghetti, opened a jar of sauce from Trader Joe's, and heated up leftover cheese sauce from Sunday's macaroni and cheese. I checked every veggie bin we had and made a big pan of sauteed veg (carrots, onion, zucchini, yellow pepper, tomato, mushroom, broccoli) with garlic and basil, and then sliced up a few leftover "grandma's chicken" breasts from the weekend and sizzled them in some butter and garlic. I found a small focaccia in the freezer so stuck that in the oven to heat, and voila! Dinner! Everyone had pasta and their choice of toppings, and it was pretty good.
 

Another roasted cabbage steak, this time with roast pork, Asian style from the freezer. Sort of like a lazy stir fry what with it cooking on a sheet pan. A cup of hot and sour soup on the side.
 
We'll be setting up outside by 5:30, so something early and fast.
DH will probably go pick up some kind of fast food and get back and get his van out of the way for the tables to go up.
 
Still picking through the freezer trying to make space for a few more dishes.
Found a packet of frozen rice and another with about a cup of ratatouille. Plus one lamb porterhouse steak that I roasted. So that’s tonight’s dinner and it did free up a little space, thank goodness.
 
Oh sigh. My goody home attendant has been suspended by the agency because she refuses to get a flu vaccination. Had plans of holiday baking with her this weekend but not to be.
So back to the drawing board with retraining people about how my household works and where things are located, blah blah blah.

Took 3 more items out of the freezer today: soup, boneless oxtail meat and a filet mignonette.
The filet is for the weekend and the 15 bean soup gets eaten first. Added some orzo, oxtail and roasted tomatoes to the soup as it heated and that was tonight’s dinner.
