You will love the F&G festival. Everything is just so lovely and pretty and colorful. Make sure to "plan time" into your schedule to just wander around Epcot gardens. Disney adds special areas to epcot just for the flowers and displays. I'm not sure how many days you plan to do Epcot but with the F&G displays, shows, merchandise, etc, I always plan an extra day just for that (or just skip the regular rides/shows).

I assume you have a fear of butterflies? Well, if you do decide to just look inside really quick, you won't find them "all over". When we went into it in May 2011, we had to really search out for the butterflies. They have beautiful tropical plants inside, the topiary of Bambi and a small water pond.
It sounds like you've done a lot of your homework already. The only "planning" I would do for the rides is to know which rides you want to get a FP for. And now that Disney is enforcing the FP return time, you have to pay attention to the actual start and end time.
So if you know what the more popular rides are, whether you want to ride them or not and where they are located, then that's the high-level planning you should do.
For a relaxing time, you don't want to be criss-crossing all over the parks but you have to balance that with not missing out on a FP you really want and waiting in a long line.
For us, we pick 4-5 rides we really want to do in a day and plan those either via FP or getting to park at rope drop ... then we basically just go around in a circle and see shows, have a snack, go on rides, etc.
As for snacks -- Magic Kingdom is famous for it's Dole Whip which can be bought in Adventureland at MK. There are 2 locations (one does orange and the other does pineapple). A Dole Whip is like a soft-serve ice cream cone and it can be 1/2 & 1/2 with vanilla and pineapple or served as a smoothie, etc.
We also really like the strawberry short cake from Mrs. Potts in Fantasyland and of course anything from the confectionery shop on Main Street.
At Epcot, go to Ice Station Cool for free sips of soda from around the world -- don't forget to try the Beverly!!

At Germany, there is a new caramel kitchen shop with great chocolates. At France you can't skip the bakery (last time we bought 4-5 different things to enjoy since we couldn't decide). Also, France has a wonderful frozen alcoholic beverage kiosk -- Grand Marnier or Lemondade Grey Goose Slushies.
At Hollywood Studios, everyone on the DIS raves about the cupcakes at Starring Rolls. I haven't had one yet but they look ravenous!
At Animal Kingdom, for some reason we just always get a Mickey Ice Cream bar there.
At DTD, I like going to Goofy's Candy Company and choosing the 3 toppings for the "make your own Caramel Apple". Incredible! Also, you have to stop by Ghiradelli's, at least for the free candy sample, if not for ice cream!
I can't wait to see what other people like for snacks at each park.
