We are so excited our next trip to Ft. Wilderness is March 18-25, and now let the planning begin... one night we are planning on going to Hoopdedoo, and since that cost so much, I have to save in other areas so I am looking for your best camping receipes... planning on taking my crockpot,I read another tread somewhere that is the way to go so I am willing to try something new... so I want to try it out at home first before we go.. so please help me plan a week's menu....

Hope some of you will be there the same week as us...
 
Pick up a copy of the "Fix It and Forget It" crockpot cookbook....TONS of recipes in there, all pretty simple, from appetizers to soup to main dishes.

Oh, and don't forget the crockpot liners!!! :upsidedow
 
I agree with Legomom, that's a great cook book. We used the crockpot several times last summer during our week at FW. An easy way to get a couple of meals is to cook a beef roast with a pkg of onion soup mix and a can of beef broth. Use half of the roast and shred it, add your favorite BBQ sauce and you have delicious sandwiches. The other half I use the reserved juice/broth and cook rice with it and you have beef and rice. I also cook boneless chicken breasts with a can of broth and use the chicken for some easy fix meals such as chicken soft tacos, etc. Good suggestion about the crockpot liners. ::yes:: HTH Have a great trip! :earsgirl:
 
Crockpot liners I have never used them, I just saw the commerical on that today... I will go out and get them. I am all for easy clean up... esp... when I am at disney... Thanks for the tip about the cookbook...

I know this is a little early to be planning meals, but I just knew you guys could help me out with something new..

If you think of anything else just let me know..
 

My husband is the cook in our family and he likes to have as much organized when we leave as he can so that he doesn’t have to spend his vacation cooking or prepping for dinner. The crock-pot gets used a lot so that he can toss things in in the morning and dinner be ready when we get back. That Fix-it and Forget-it cookbook has a lot of great recipes that he uses but here are some of his other “standards”:

• Wal-mart has rotisserie chickens that often cost less then an uncooked chicken per pound. My husband likes to pick a couple up on the way into Disney and then eat some the first night and shred the leftovers into the crockpot with BBQ sauce for another meal. This keeps him from having to store the carcass and waste space he needs.

• Cut up veggies and meats and put them in little containers in our cooler/fridge for everyone to make their own pocket dinners and we either cook them in the grill or with the campfire at the movie (if it’s not too crowded)

• For breakfast, he premixes waffle batter and scrambled eggs at home and stores them in square rubbermaid juice containers so they pour easily and everyone can make their own breakfast. He also buys the pre-cooked sausage and bacon for the trip so that it is heat and eat.

• He makes at least one dump cake either in the crock pot or, if it’s being used for the main course, on the fire in a dutch oven. It’s nothing but a can of peaches, a dry package of cake mix (yellow or white is fine), and a few pats of butter.

• If we aren’t doing the pocket dinners on movie night then we are usually cooking hotdogs and sausage dogs over the fire at the campfire. He liked the dowel idea at FW so much that he buys some cheap dowels and cuts them down to different lengths himself. He makes some short and some longer. The longer ones he bought a new pencil sharpener for and he adds a point to the end of each of them with that – that pencil sharpener is NOT allowed to ever sharpen pencils. The sharpened dowels are for hotdogs/sausage dogs and the short ones are for the s’mores.

• He also likes the large ham slices since they are generally flat but they can be wrapped around things if they need the room. They can be grilled, fried, or heated up in the microwave and paired with all types of things.

• He also makes spaghetti with the sauce cooking all day in the crockpot but for the noodles instead of heating up a big pot he just boils water and then pours it over the noodles in a Rubbermaid container he has. I’ve now seen an equivalent on sale on TV but he’s been doing it on his own for years.

That’s all I can think of for right now. He’s planning our weekend trip for 2/3-2/5 so I’ll see what he thinks up for it and pass it along.

I just saw that item advertised on TV and wondered if the pasta really did get properly cooked.

Something else you can do to make quick meals besides using the crockpot is pre-cook some items like ground beef. Add the appropriate seasoning when you cook it at home such as taco seasoning then all you do is toss it in a freezer ziplock and when you're ready just thaw and use. Same for sloppy joes. With the items precooked and frozen in the bags you have no mess from frying the meat like splattered grease not to mention you don't have to figure out a place to drain any excess fat off the meat.

I also take leftover turkey and chicken and grind the meat in my food processor then freeze that in a ziploc. When we want chicken salad sandwiches we simply get the meat out, thaw, add the mayo, eggs, celery and onions. Boiled eggs travel nicely, just make sure everyone knows which are boiled by marking them with a crayon.

Grumpy... glad to hear ya'll will be there same time as us... hopefully we will get a chance to meet... our crew consists of Husband, Daughter and her husband to be, Granny, Tinkerbell our dog... and our friend (Maycruiser) will be joining us as well in another campsite with her family and friends of 4... calculated last night 8 weeks I am truly excited...

Next month as I cook things like Spaghetti and soup, I will make a double batch so I can freeze some for camping...

Thinking about going to the hoop de doo one evening, need to decide soon so we can make reservation...

Hi, We will be there about the same time too. Glad I read all of your responses for dinner suggestions, it gives me some ideas. I too need to make a reservation for the show. :wave:
 
well, it seems like we may be doing the Dixie Stampede instead of the Hoop de do.... everyone decided they wanted to try something new... has anyone been to dixie stampede?? thoughts, comments welcome....

cyndilou01: is your Tinkerbell a Saint Bernard? If so, we met her last 4th of July when we took our baby Saint to the kennel for a few hours. They were telling us that Tinkerbell is a frequent visitor. :woohoo:
 
We did the Dixie Stampede last year. The food was great and the show was ok (I much prefer Hoop De Doo). The biggest thing I remember is the pre-show guy and his light up suit :lmao: . He was so conceited!!!!! We all laughed at how many times he would say how wonderful he was, how great he looked, how much he knew the audience loved him and how he knows we all want to buy his CD because he is soooooo wonderful. The way he talked you expected to see hords of women falling at his horses feet for a chance to kiss him. :rotfl2: :rotfl: :lmao:
 
that is funny, so did you buy the CD...LOL... well my friend (maycruiser) and her family are going to the stampede, and we all like to hang out together, so I guess we will go ahead and give it a try...

speaking of maycruiser her mother passed away on Sunday, so with all the stress she will be more than ready for Disney just to relax and have some fun..

idubberly.. our tinkerbell is a small mixed Daschound/Chiwawa, sorry cant spell, but she is our smallest child, and just loves to go..., the first time we took her to disney two years ago she was a puppy and weighed all of 4 pounds now she is about 12 pounds... :banana:

Our Bogey (he's our baby) loves to camp in FW too, though he is a might bigger than your Tinkerbell. If I remember correctly, he was 19 pounds at 2 months. He weighs about 130 now (at 14 months) and has about 50 to 60 pounds to go, but in his mind he thinks he is the size of a lap dog.

By the way, we are neighbors of yours, we live in Fernandina Beach!!!!!! :cool1:
