Honey-Nut Christmas Cookies*

Recipe By :Ladies Home Journal
Serving Size : 48 Preparation Time :0:00
Categories : Cookies Rolled


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups all-purpose flour
1 pinch salt
1 cup cold butter -- cut up
8 ounces cream cheese -- cut up
Filling
1 cup walnuts
1/4 cup sugar
6 tablespoons honey
1 teaspoon butter -- melted
1/2 teaspoon cinnamon

Combine flour and salt in large bowl. With pastry blender or 2 knives, cut in butter and cream cheese until blended. Divide in half. Shape dough into ball. Wrap and refrigerate 1 hour.
Filling: Grind nuts with sugar in food processor. Transfer to bowl.
Stir in honey, butter and cinnamon. Makes 1 cup.
Preheat oven to 325ºF. Grease 2 cookie sheets.
On well-floured surface, roll half the dough 1/8 inch thick.
Cut into circles with floured 2-inch round cookie cutter.
Place 1 teaspoon filling on half the circles.
Top with remaining circles. Press edges with fork to seal. Transfer to prepared cookie sheets.
Bake 22 to 25 minutes, until golden. Cool on wire racks.
Repeat with remaining dough, scraps and filling.

Evening all, you've been mothy the past couple of days!

We got a tree, finally. A 4 foot pre lit...Ed wanted this for this year, then it will be the window decoration next year. My friend Heather's comment was that next year, it can be the Disney tree. Ooops, she hasn't seen my tree-it screams DISNEY!!! I won't be able to put all the Disney stuff on a small tree!

Sounds like all the yaya's had tons o fun in Sunny Florida. You all departed in time-it's in the 50's today. I think Mother Nature made sure you got the warm weather to get you to come back!

I should go and write the Christmas letter to go with the cards-I've been remiss in contacting everyone this year and figured a one page letter would be good.

Nancy, I guess everyone knows about your sparklies in the cards but me! It got in my car, and it's being kept company by all the pixie dust (really). If you do get to Cheesecake Factory, have a slice for me-still haven't been there.

Dave, you're so lucky, I haven't met the Beast in person yet, and Bethie and Tara got to have their pictures with him!

Deena, Styx wasn't my first, but I saw them during Paradise Theatre. My first concert was Shaun Cassidy-I was 11, so I have an excuse! My claim to fame is seeing Squeeze about 10 times.

Sherry, I'm hoping you feel better soon and that they do a better job with Junior's MRI this time. I had a dye MRI, too, and the tech didn't bruise me much.

JRKaren, sorry that you were feeling crummy. Don't do all that OT, or else you'll be in bed again!

Alan, I"m probably in the minority. I loved picture #4. Your girls are adorable.

Amanda, how are you doing? The first few Christmases without my Dad were rough-some hugs and prayers for strength are on their way.

Christmas party is after Christmas, at my house. I promised them Crabcakes and steak if we beat sales plan, and they're gonna hold me to it, lol!

Hi All,
Man am I a pooped puppy, so this will be a totally EIEIO post!! The weekend was crazy, but ALL of my CHristmas cookies are made and have been distributed. Yeah!!! The kitchen has yet to be deep cleaned after all of that....but no more cookie mess this year for me!! I ended up making 8 differant cookie recipes, many making 2 or three batches!! I made snow balls, kolachkies, sugar cookie cut outs, a Disney double chocolate chunk (very good), peanut butter kisses, nut cups, potoato chip cookies and toffee. Whew!!!! Have I said how happy I am to be done with all of that?

Monday I went to a Christmas Party that was a great deal of fun. My old boss invited me to the Christmas party for her managers. We went to the Field Musuem to see the Jackie Kennedy collection. It was very cool. Then on to lunch in the Walnut Room at Fields. It was quite tasty. And the Walnut Room was absolutely beautiful. This year the tree is decorated in true Kennedy fashion. Stunning!!

When we got to our seats at the Walnut room, our placecards were 2 pound holiday chocolate greeting cards with our names on them. How fun!! Then there was also a little box at each seat with a lovely little gift card for $100. THat was very generous and a great little gift. Of course we had strict orders to only spend our gift cards on ourselves. I was having a lot of trouble making a quick decsion if what to get......9 floors to browse through and just not enough time. I left with my gift card and a promise to go back and spend it wisely!!

So after that I ended up hanging out with my old boss, making about 100 cookies for the girls. THey are having a Christmas party at school tomorrow. But I got smart and bought a case of Subway cookies, (the perks of knowing people who own franchises) and baking them off with my old boss over some wine!! Whoo hoo!! That was fun. She manaaged to get *slightly* tipsy and a good time was had by all. Byt he time the cookies were baked and cooled it was almost 2 am........I had a bit of a tummy ache, so I spent the night!!

Today I wrapped more presents, delivered cookies and took my car to the shop......AGAIN!!!! Now the part that was needed to fix my car was in last week, but of course there was no time to get it in....so I got to take it in today for the old problem PLUS A NEW ONE!!! Will this ever end? So I told the guy here is my car. Listen to the noise in the front. If this is also gonna cost me a fortune, don't fix anything. I am going ot trade it in for soemthing that won't break....like a foriegn car!! So he hears the noise and says tie rod!!! I say...well this is a family board....but you get the picture. He asks me what is wrong, it should be covered under the warranty. I kindly remind him, the warranty was long gone...about 500 miles ago. He has 2 words for me...open ticket!! When I took my car in las time, it was still under warranty and he left the ticket open until the part got in and I could get it in.....so my car still was under warranty for the tie rod!! My faith in the dealarship has been restored!!! I wanted to kiss the guy!! Of course I say this, and my car is in the shop. maybe I should let you know how things all turn out then sing my praises!! Anyway, I have a nice loaner in the mean time. Keepingmy fingers crossed that they get it right!!

Anyway, that is my news here! Sending some :wizard: to those who are not feeling well!!!

I tried reading the whole thread but .. well .. y'all are a talkative bunch. I made it through 70 pages though .. my accomplishment for the night. :blush: Your Club Med resort seems like a fun place .. any vacancies? :)

Suzanne, I actually have four books I was reading. The one I picked up last night though was book 6 in the Mitford series and started in on #7.

Suzanne, good job the prelit tree! I bet the boys are about bouncing off the walls with Christmas anticipation! That's what I miss the most - the traps my kids would set to catch Santa, they wouldn't go to be until 2:00 am on Christmas Eve because they were so excited, the horrid school shop presents they would buy!

Nancy - that stinks about your DH's work party! I, on the other hand, don't like to go to parties. I know that this will shock all of you - but I get pretty shy being around groups of people. :blush: I will start sending you my invitations and you can go for me, ok?? ;)

Liz - my car has been giving me fits, too! And one of the problems was the tire rod! It's now fixed - but, alas, mine wasn't covered under warranty. Since that's an over $200.00 repair - I am very happy for you! Oh no - Liz is a Nancy in the making with all of that baking! :shocked: Help! I am surrounded by Martha Stewarts - wait, Boo and Kimmy are still here, I'm okay.... ;)

Do you need to use 'real' butter in a block for this recipe? You can cut Country Crock up;)

Thanks to all those who are keeping me and my family in your prayers. Things are hectic, but I know Christmas will come and all will go well. Dad isn't doing the best right now. Actually he is talking about a trip this weekend, doesn't want me to tell anyone...he has done this before, but not actually left. Not sure if he will this time or not. Says he has a promise he needs to keep. Other than worrying about him and needing to get his Christmas cards out to his customers, I am doing well.

Yesterdays lunch went well. I typically don't care for food at 'upscale' restaurants, but it was very good. The main goal of the lunch was to let 'us' admins know how appreciated we are. My manager had to say what he thought was my best qualities. We all received a rose. It was very nice.

Today is the building lunch, brought in a side dish for that (Dixie Chili Dip, if you haven't made this you should) and they are providing Montgomery Inn...which is very good. Afternoon we have a cookie exchange with my main group. This evening is dinner for the group at my manager's house, made cookies for that and picked up the soda. This should end all the 'gatherings'.

Last night Mandy Ellen and I made 21 reindeer ornaments out of C9 light bulbs. Cassie made 9 last week. One more project down....a few more to go.

When will Saturday be here...I need a good sleep in.

Liz--thats great your car will be fixed under warranty. The dealership did that for me a couple of months ago when my rear brake caliper kept sticking. One guy told me it was a defect so when I told the dealership that they got it covered under warranty of which mine had expire many months back.

Actually Todd, not PDBs... I kind of wish. Just am not dealing well today.

I shouldn't be posting... I have a whole thing I am typing up for someone I represented while at WDW, and I have a lot more to do!!! Crap, I just realized our printer here is broken and my computer that has the printer at home isn't hooked up...

Sorry about car troubles.....mine goes in today...but only for an oil change.

Amanda......I don't know about Country Crock. Is it a margarine? Or some other kind of "blend". I think you have to watch the water content in a lot of them. Margaine would be okay to sub......it might change the outcome somewhat though.

Sorry about the blah day, Elaine.....and I will get to that PM sometime today. Gotta run some errands early though.

Pam, I don't like going to parties either....that's why I would rather it be a sit down, so I can sit by someone I know and not "mingle".....I am NOT a mingler. At a small house, I don't think there will be sitting down :rolleyes: ....and Dave is a talker. He will abandon me. I am in the mind-set to have a terrible evening....so if it isn't too bad, I will be surprised ;)
 
Nancy, no rush on the PM... whenever :)

I haven't made those cookies honestly, but when it comes to baking I always use butter instead of any blends/spreads. They just don't even come out the same if I don't.

Good afternoon all!

I would like to do more typing but both of my wrists are killing me today so it is not very comfortable! I'm trying to get my school to pay for ergonomically improved mouse pads and wrist rests. I go to the dr. on the 28th to find out if it is arthritis or carpal tunnel or both. Anyway, the motrin hasn't kicked in yet to make it better.
