For those of you that are worried about my DD and her ez bake oven cake, I admit it, I took 2 healthy bites so it looked like my DH ate it. She didn't know.

I did my best to choose favorites, but really, there are very few that I don't like a lot! My kids feel the opposite, unfortunately. :rolleyes:

Hi Lisa - I'm not sure who posted this recipe, but it was very tasty! After reading it over again, though, I realized that I made a mistake! I put ALL of the sour cream sauce mix in with the chicken and other ingredients and made the quesadillas with that filling! I love it when mistakes turn out yummy! :upsidedow

Skillet-Grilled Burritos
Makes 8 servings

2 cups chopped cooked chicken breast
1 (15 oz) can black beans, rinsed and drained
1 (11 oz) can Mexicorn, drained ( yellow corn with red and green bell peppers)
1 cup shredded 2% shredded cheddar cheese
Creamy Cilantro-Jalapeno Sauce (recipe follows)
8 (8-inch)soft taco-size whole wheat flour toritillas, warmed
cooking spray
salsa

1. Toss together first 4 ingredients and 1/2 cup Creamy Cilantro-Jalapeno Sauce. Spread 3/4 cup chicken mixture just below center of tortilla. Fold opposite sides of tortilllas over filling, roll up. Coat burritos with cooking spray.
2. Coat a hot griddle or nonstick skillet with cooking spray. Cook burritos, in batches, on hot griddle over medium heat, pressing with a spatula, 3 or 4 minutes on each side or until golden brown and cheese is melted. Serve with salsa and remaining Creamy Cilantro-Jalapeno Sauce.

Per serving(including 2 1/2 Tbsp sauce): Calories 342, Fat 10.3g, Protein 23g, Carb 37.2g, Fiber 4.6g, Chol 40mg, Iron 2.3mg, Sodium 612mg, Calc 119mg.


Creamy Cilantro-Jalapeno Sauce:
Makes about 1 1/4cup

1 cup light sour cream
1/2 loosely packed fresh cilantro leaves, chopped
2 Tbsp diced pickled jalapeno peppers
2 tsp chopped yellow onion
2 tsp Dijon mustard
1 tsp lime zest (i used lime juice instead)

1. Stir together all ingredients in a small bowl. Cover and chill 30 minutes. Store in an airtight container up to 2days.

Per 2 1/2Tbsp: Calories 43, Fat 2.5g, Protein 2.1g, Carb 2.6g, Fiber 0.1, Chol 0mg, Sodium 56mg, Calc 1mg
 

Favorite fruit: gala apples (usually dipped in peanut butter!)

Favorite vegetable: corn
 
Hi - here I am again - waaay behind.

Sorry - got sick last week, again! This is getting stressful, lost another day of work, am in a five day trial this week and am a little numbnuts.

Forgot to post weight with Brenda, just did so. Too late to count, I am sure (sorry Brenda) but this challenge is about accountability and consistency, so I wanted to keep things on the record.

Weight was up .8 last Tuesday :( Then I got sick. Still not working out consistently.

Have an appointment with the trainer tomorrow night, with 25 cm of snow coming! I will be there, weather permitting. Tonight, I have to prepare my witnesses for tomorrow.

I messed up on COW this week too, drank the water, ate the veggies (I drink a little can of V8 most days as part of it), but did not find my pedometer till tonight. So I missed the reporting.

I will get on track with that too.

Anyway, hello to everyone. Here are some answers to some questions:

Who is your favorite author and what type of books does he write?
Mary Higgins Clark -mystery.

How often do you weigh yourself?
never more than twice weekly.

Do you incorporate stretching/flexiblity in your workouts?
I am sure the trainer will work this in when I get together with her, but not yet, not really.

What's for dinner tonight?
We had salmon, mashed potatoes and corn.

Biggest obstacle to staying healthy on the weekend?
Being at other people's homes where I don't control what is served.

How many times have you been to Disney World?

Four times - not enough. Another trip tentatively planned for January 2010.

My favourite fruits are banana (eat one every day) and strawberries.

Gotta go do my trial prep.

Hello Everyone!

WI at WW this morning - I'm down another 1.4 for a total of 4.4 for the first 2 weeks. I was hoping for more since I haven't cheated once and I've worked out a bunch of times. Oh well - I'll just keep on truckin' along! I think it's TOM for me, so maybe next week I'll have a woosh!

It's going to be a rough week for me - DH is having surgery on Wednesday morning, and has to stay overnight in the hospital. Nothing too serious, gallbladder and upper GI Endoscopy, but the hospital is about 1-1/2 hours from our house. And I usually carpool w/ DS (his college is 15 minute from where I work), so it'll be alot of driving back and forth Wednesday through Friday - home, hospital, campus, back home to let the dogs out, back to hospital, etc. I'm going to have to do some planning before then to decide what to eat. As long as I prepare myself w/ reasonable snacks for on the road, I guess I should be ok. It just makes me nervous being out of my comfort zone!

Well, to answer a few more questions (I'm still VERY far behind)....

Wednesday's QOTD: What is your motivation to lose the weight? I guess I would be my motivation - I'm sick of not fitting into my clothes and I'm sick of the knee and back pain that I go through every day.

Question of the Day: What is your favorite Quote that help you and that you use in your weight loss journey? I guess I don't have a fav. quote that's related to weight loss, but my favorite one is "Well behaved women seldom make history" (Laurel Thatcher Ulrich). I really like some of the ones mentioned on this thread, too.

What is your favorite "Go To" meal that you make yourself when you are in a pinch, or the family is eating something you can't eat? I always have my freezer stocked with Lean Cuisine's for this reason. Add some veggies and yogurt, and I'm good to go!

What are your favorite treat's that are still relatively healthy? I love Weight Watchers oreo-type ice cream bars! I also love the 100-calorie strawberry cupcake thingys - filled with cream and very tasty!

What is your next event that makes you nervous about staying on track?
What is your game plan to get past this event and stay on track/OP?
I have 2, actually. My DH's surgery mentioned above, and my birthday is next week. Before I started this journey with all of you, I told my DS that I wanted a Cold-Stone Creamery b-day cake this year! Guess I need to make sure they don't buy one!! Not sure what my game plan is yet for either, but I'm working on it.

Linda, hope that you are feeling better and be nice to yourself while you are in trial. It is so stressful to be in trial because you just can't get out of the trial mode until it is all done. I always make sure the DH and I are not in trial at the same time or else our household would fall apart. The good news is that the working out with the trainer will help the stress levels. Good luck!
 
I'm still struggling with tracking the food. It didn't help that we had a baby shower today for our para. I am making strides in exercise though! I took my dogs for an hour walk the last two days. I am prepared to get back to tracking and eating healthily tomorrow and plan to go to the rec center on top of my doggy walk.
 
Hi, everyone! Hope those of you watching the Superbowl are enjoying yourselves! :goodvibes DH and I don't do sports, so no Superbowl for us. We've just been hanging out doing as little as possible instead :thumbsup2

I gained a bit this week. I'm still down more than when we started, but up the last two weeks.

That is ok though because... I'm pregnant! I saw the doctor on Thursday and am 8 weeks. I've known since the beginning of the month. I'm still trying to eat healthily and get in as much exercise as I can tolerate. This week was pretty bad though because I was having a bit of "morning" sickness, so I ate whatever whenever I could. Plus, I only exercised once cause I just didn't feel up to it.

Anyway, I am going to continue to try to keep up with this thread and work toward doing the COW better. I am going to drop out of the weigh ins though because I will more likely gain than lose and I don't like bringing the numbers down for everyone else.

I'm a little disappointed in myself for not having lost more before becoming pregnant, and actually gaining a good bit Right before. BUT, I'm totally excited about being pregnant no matter what size I am :cool1:

I wish everyone the best of luck with this challenge and I will still be around posting occasionally and cheering you all on!!:cheer2:

My favorite vegetable- corn on the cob. Fruit--blackberries. Got home tonight to find out husband already ate-was looking around for something quick and found a tri-tip I had kind of forgotten about, (it was perfect- still a little frozen in one spot) whipped out my electric knife- carne asada'd it and stir fried it with some fresh broccoli and mushrooms I got at Costco, ginger, garlic and wasabi soy. Mmm. Husband even ate some in spite of the leftover steak he raided when he got home. Thought of the board and one of the questions of the day when making this :)

Eating is hard this week since we are midterm mode. You can't eat at your normal time. YOur entire schedule is off. Yesterday we went out for lunch. SOmething we never do since we only have 20 minutes for lunch. So what I usually eat for lunch I ate for dinner.

I have been slipping with my exercise. I was pretty consistent last week but I have not been working out as much as I should. IF it wasn't for the COW I wouldn't get any steps in.

How is everyone doing with the COW? AS there are more and more steps to it you might want to make yourself a chart for the week. That has helped me a great deal when we were doing the COW's in the past. I just made up my chart for this week yesterday becasue I felt I needed it to help me keep track.

We had a big vacation last year so I hope you guys can come up with some good plans so I can get excited for someone, anyone who is going away. My ds1 may be going to SPain in March to visit his girlfriend. He just got the approval from his boss that he can take the week off but now he needs to find a hotel and plane.

Will be praying for you all...stay careful being on the road so much too!! Good idea to plan ahead, it helps keep you from eating things when you normally wouldn't.

I'm doing okay! I water, fruits and veggies are easy for me, and since I bought a new pedometer, that's going well, too. When we go beyond the 5000 steps, though, I will be in trouble-I'm averaging 6500-6800 right now. I probably will have to post myself a chart next week, though.

Well, nothing for the kids. :upsidedow I'm saving money to send the youngest on 2 smallish choir trips this year, and a major one next year. Can you say $$$$? Second youngest is headed off to university in the fall, so there goes a whole whackload of money! :faint: And the oldest 3 never vacation with us anymore. :sad2: I do have DH and I booked in at the Poly :Pinkbounc for 5 days in August. I got the 40% discount :banana: and this will be our 25th anniversary trip. It will be a 'resort' trip, since DH doesn't particularly like the rides-we'll do them, they'll just be limited. Oh, he DOES do food, so I've booked the dining plan. Now, whether we go or not will depend on a lot of things. But....it IS booked. ;)
Don't forget...BL is on tonight. Last week I fell asleep at 9:40 so my mom had to fill me in. Hopefully, I'll be able to stay awake until 10 tonight. :rotfl:

I'm doing ok with the cow. I don't have a pedometer yet, but am getting the water, fruits and vegies in so far every day this week.

We tend to take a few short trips in the summer. My sister has a house near sebago lake in maine, so we get up there for a weekend or two, and last year we rented a cabin right on the lake, just my son and I for a long weekend which was great. We met my sister and her family at the beach each day, but then we had our own space at night. We also go camping for a few days with friends, and after baseball is done in june, I want to try and get a few extra weekends in camping this year. Great question! You've got me thinking it's time to pull out the calendar, and make some definite plans.

Hang in there Dona. Hopefully midterms will be over soon, and you'll get back into the swing.

We are very lucky as we get to do four trips this year. We are going to San Francisco for a few days for Spring Break. In June we get a bonus trip to Disneyland thanks to Grand California Villas DVC developers points. Then in August we go to Lake Okoboji in Iowa for a week -- DH's family has owned a place on the lake since 1893 and we go every year. And, last, but not least, seven nights at WDW at VWL and AKV Savannah view in December for Christmas.

So I have a lot to look forward to and a lot to work for to make sure that I am healthier and slimmer by the time these trips come along. I have been doing well but it is time to kick it up and get a little more serious, especially with the exercise. My son wants to do the COW, too, so that will help.

I am praying that DH's job is fine, if it continues to be so, then we are going to California!!!:cool1: I am in the middle of planning it now. We will go to Sequoia National forest and go horseback riding in the mountains, and then we will go to Disneyland for 3 days, universal for 1 and a beach day for another. I can't wait!

I have to tell you guys something great! Yesterday during a case (I work in surgery) the nurse anesthetist was asking my about the BL competition at DH's work. first official day was yesterday. She is a cheerleader for me!:cheer2: Anyway, the Surgical tech said that she would give me $10 if I win, the surgeon said he would match it as well as the nurse anesthetist and anesthesiologist. As this story got around, I am up to 8 people at work willing to match the $10 if I win!:thumbsup2 So now I really have to get movin'! ;) I already exercised for 1 hour on the eliptical and I am on my way!
