Weekend F&W trip question

Hello! We will be going to WDW just for a weekend in October to go to F&W for my birthday. Here is my question, we arrive Saturday and will probably have dinner at Disney Springs, and fly out on Tuesday at 6 AM. That leaves us with all day Sunday and all day Monday, and my original thought was to go to F&W on Sunday, then have a lazy day on Monday (pool, monorail bar crawl, etc.) since we have such an early day on Tuesday. However, would Monday be a much better day to go to Epcot? I've been to festivals over the weekend and they were manageable and it will be just 2 adults this trip. Monday is also my actual birthday but not a big deal either way. Comments?
 
Monday will be less crowded at EPCOT than Sunday will be.

If it is Columbus day weekend, so that Monday is a holiday, then the difference won't be as big as on a normal week, but I think Monday will still be less crowded.
 
Also is it Epcot EEH for Deluxe guest on Mondays (if your staying in a deluxe resort) might be a consideration.

It is the weekend after Columbus Day.

We are not staying Deluxe.

One thought about going on Sunday, there is a MNSSHP that evening so wondering if the other parks would be less crowded.
 

I would personally opt for Monday. In our experience Sundays are more crowded, especially with locals attending as well. Whatever you decide, enjoy!

Our experience is F&W is much more crowded on Saturday and Sunday then it is on Mondays. I would do Monday. Or both days.
