Another oldy but goody


CORAL ISLE SCRAMBLE
(now known as Kona Cafe...)

(serves 2)


4 Slices of tomato
8 strips of bacon - cooked
2 biscuits sliced in half
4 eggs scrabbled
4 oz cheddar cheese sauce or 4 slices of cheddar cheese
1 scallion finely diced

Grill both sliced biscuits and tomato slices until lightly browned

Place 2 biscuit haves on each plate.

Top each biscuit half with a tomato slice, 2 pieces of cooked bacon scrambled eggs and cheese or cheese sauce. Brown under a hot broiler and top with diced scallion.

Vegetable Frittata
(Grand Floridian Cafe)

(1 serving)

3 whole eggs
1/4 cup diced tomato
1/4 cup zucchini diced
1/4 cup mushrooms diced
2 tblsp. onion diced
2 tblsp. chives chopped
2 tblsp. frozen spinach - chopped, thawed and drained.
2 tablespoons butter (or whatever you find to use...)
2 tablesp. parm cheese grated
2 slices tomatoe
2 think slices zucchini

In a medium size mixing bowl, beat eggs and fold in tomatoes zucchini, mushrooms, onion, chives and spinach.

Melt 2 tablespoons of butter or margarine in a 10 inch non-stick skillet or omelette pan and add egg mixture. Mix egg mixture in pain until partially set. When frittata begins to hold together, sprinkle with parm cheese and top with sliced tomato and zucchini. Continue cooking until eggs are done and garnis his warm.

Remove from pan and serve immediately.
 
& of course.. you MUST have...

Konk Kooler....

1/2 oz dark rum

3/4 oz light rum

1 oz passion fruit juice

1 oz pina colada mix

1 oz OJ...

Place all ingredients in a cocktail shaker and shake vigorously.

Serve in a tall glass filled with crushed ice. Garnish with a wedge of tropical fruit...

(what... no umbrella????)

Nan, the numbing drops work wonders, Wilson won't feel a thing. Tyler's only had one or 2 ear infections ever, but one time we found out about one the day before flying Florida. Dr. gave me the numbing drops and he was fine, didn't make a peep. And since you have antibiotics, both kids will be starting to feel better in a day or 2. Big hugs for both of them from me! :hug: :hug:

::yes:: we have used them many times before. So I'm not too worried. It was just so sad that he was stressed and could tell me that. He went to bed at 7pm tonight. I think being told that he was sick made him listen to his body tell him he was tired. We'll be okay tomorrow, travelling with his cousins will make it great :thumbsup2

Nan, When Daniel was in 5th and 6th grade, the doctor kept saying "one more strep throat and we are taking those tonsils out". When I would tell her that she said that last strep throat she would say..."yup next time".

Well, we never took them out and once in middle school, he has never had another strep throat...just out grew it I guess. I hope the same for your kids.

I'm hoping not to have them out. Our insurance has very high deductibles per person, so we'd be way out of pocket if we have to go this route and I of course more importantly I hate having them under. 4 times allready with Willie and his ear tubes, 3 in and one out.

Ohhhh I hope they both feel better... :hug: :hug: :hug: Tell them they are going to Disneyworld for the second time this year... :thumbsup2

first time, we didn't stop in for repo, not enough time off from school...but your point is well taken, these children do not lack for holiday travels.

ok, all packed. always a bit of work at the end. We made it with 4 suitcases and one garment bag, 2 carry ons, backpack for the boy and purse for me and mol, not bad. I'm hoping to have one of my nephews bring home a bag or two for us as to make it easier on the ship. I'm still worried about my mom getting around in our room with the luggage in the way. I might ask to see if they can store it for us. Our suitcases don't fit under the bed or in the closet, so the only place to leave them is on the wall as you walk past the bed and it's a tight walk.

We leave her at 8am tomorrow, might come by to say one last bye in the morning.

Oh the doctor visit.

Wilson does have an ear infection (raging big one)

And Molly's is on her way to a sinus infection

and both of them have HUGE tonsils...I think this will lead to them being watched and maybe out in the near future...we will see...

Both kids are on antibotics and I have numbing drops for Wilson. His ear is gone hurt like a bugger on that flight. Poor baby. He came home and cried he was stressed :sad2:

Sorry about the kids and I do hope the journey is uneventful, partucularly for Wilson.

OK, well how about Tonga Toast from the Kona Cafe?

Tonga Toast

Ingredients:

2 or 4 slices sourdough bread, cut 1 to 1 1/2 inches thick
1 banana
1/3 cup sugar
1 teaspoon cinnamon
1 egg
1/4 cup milk
1/2 teaspoon vanilla
oil or shortening for frying
whipped butter and/or syrup

Method:

Cut a 1-inch pocket in one side of each bread slice. Cut banana in half crosswise, then split each piece lengthwise. Remove peel and stuff two pieces of fruit in each pocket of bread; set aside. Mix sugar and cinnamon; set aside. Mix together well the egg, milk and vanilla.

Heat about 4 inches of oil in a pan to 350º F. Dip stuffed bread into egg/milk mixture and let it soak a few seconds to let penetrate bread. Fry bread on both sides in hot oil until lightly browned, about 3 minutes. Drain on paper towels or wire rack. Sprinkle with cinnamon sugar and serve

Hi Nan......it's a good feeling to be all packed and ready to go! Now the fun begins! You're going to have a great time.

Hi All and Nan.....Just an update, AAA came today to tow John's truck to the repair shop. Hopefully they can get it done tomorrow and we'll see what it's going to cost. We took it locally to a place called Kost and they said the parts won't cost much but the labor for the truck is going to be expensive. C'est la vie!

We need to get it back as quickly as possible so that John doesn't have to keep walking up the driveway in the snow. It's killing him. It's so cold and such a hard walk up plus carrying necessities, groceries, etc. It's no fun. Even Tom had a hard walk up today being that it was so frigid outside. Just makes it worse. I'm stuck in the house until we get a vehicle that can go up and down. There's no way I can do it. Fun on the mountain in the winter!

Good Morning

I got up 2 am could not get good sleep must be stress with work.

I got up again at 7am and went to my work for foods shopping.. got everything apart from turkey..

I order turkey and will pick it up tonight..

and came home and back to bed and got sleep much better...

I am glad today is my last day work as it was a nightmare yesterday..

I suppose to help out turkey order but boss put me back in food hall and put me on till for almost 6 hours which I was pissed off...

I don't know what I am doing today at work..

Deborah, I went to M&S food dept yesterdeay and it was wall to wall people!! I just relaxed myself and kept going. Queued for ages at the check out, but chatting to others in queue so that helped. I think the good folk of Harrogate are doing their bit for the survival of M&S!!!:rotfl2:

Today I have to go again as some of the dates were ridiculous for Christmas. It is always the same and we all just have to keep going back and back!!!:sad2:

Even the checkout ladies were saying they weren't going to shop as it was so busy!!

Yesterday I went to work and the traffic was horrified as only 5 mins from my house to work with drive... it take me half hours to get there... by bus..

I have to take my car today because of I order the turkey and don't want walk home with it... also I have to look for car park plus traffic...

It was a nightmare at work... I am dreadful to go work today.. sick of nasty customers and some were lovely people.

Two staff were shopping and nasty to me for no reason... I reported it boss over 5 pounds voucher. I don't need that nasty. I cannot understand Christmas should be merry as it was not...

Thank god today is my last one and I get off 5 days... woo hoo....
