There's and excellent sticky thread at the top of this board called Everything You Wanted to Know About Connections Meal Vouchers . The answer to most of your question can be found in the first couple of posts.

In brief, meal vouchers are tickets that you can purchase from buying clubs like Connections and Hotwire Savings Club. There are 3 types and each offers something different.

With vouchers, you have the advantage of pre-paying for your meals. This gives you a better fix on what you overall costs will be for your trip.

They can also be a good value for the money. Vouchers not only cover the cost of the food, but also pay for any tax and gratuities that are involved.

Since the vouchers have a set cost to you, there are many cases where the cost of the meal will exceed what you paid for the vouchers. So, the vouchers can have the additional advantage of saving you some money on onsite dining.

Vouchers limit you to dining at participating restaurants and also may limit you to the hours that they can be used. For someone who take a looser approach to touring the parks, this can be very restricting.
