Vero Beach dining and spa questions

We're going to Vero Beach for 3 days in February. We will probably eat at Shutters one night and do a spa treatment one afternoon. Is it necessary to reserve these ahead of time or would we be able to schedule these once we arrive?

You can do same day at Shutters. I had a Spa apointment for a pedicure and they canceled it as they were doing a wedding . We are going to Shutters in Jan and will make ressies this week.
 
As to the dining, you'd proably be ok to wait...but I like taking the mystery out of things so I would call the resort and make a ressie for the night I wanted. As to the spa, we've never had a problem. You may want to stop in after you check in and make your appointment. As I recall they're open to like 6pm.

We were there recently, and the spa was wide open and offering specials.

The only time I'd be a touch worried about not getting into Shutters is Saturday morning when they do the character breakfast. That's very popular, and can fill up with no availability.
 

Thanks to everyone for your input. I think I'm going to chance it and just play it by ear. We're not interested in the character breakfast, only dinner. We've been DVC member for 11 years and I've always made ADRs for each day of every trip, which also means planning out which park to go to every day of the trip. This time around we are hoping to just wing it the whole time, including 3 days at WDW. It will be a whole new experience but I figure it's worth a try at least once!
