Okay - I am trying desperately to eat more veggies but I really don't like them. I like green beans and I like brocolli. I'm willing to try new stuff though. I have purchased a red, yellow, and orange pepper, zucchini, a yellow squash, and tomato. I'm going to try sauteing them together in coconut oil at the suggestion of my bootcamp coach. What other veggies should I try...and how to prepare them? Help....
 
I love red bell peppers raw. My dd and I often eat those raw and cucumbers and tomatoes(which both are technically speaking fruit). Carrots with a little nutmeg sprinkled on and dash of margarine taste pretty yummy.

How about sweet potato? Can bake em or cut them in strips like fries and coat lightly with some kind of healthier oil and bake em.

My brother makes some awesome fresh green bean salad he soaks them in Italian dressing and Parmesan cut in some strips of onion and some fresh garlic. I like it but added red pepper once it was good but he likes it the basic way with just a little onion and garlic. It starts to add calories but its a good way to transition into eating more veggies. I personally have always loved veggies plain, raw even, most of the time. About the only veggie I cant stand is celery and even that I will eat with peanutbutter or cream cheese. And corn i don't do corn that often. Its basically undigestable so can't figure you really get all that much nutrition from it anyway. I do like corn on the cob occasionally, like a few times a year maybe.

My mom always baked the squash with butter on it but you can also put those things in muffins and breads.
 
i really like the boxed frozen vegetable, Green Giant, and they are labeled such as "Heart Health" "Immunity Booster" "Healthy Vision" man they are great.

how about V-8?
 
I am a vegetarian, so eating more veggies isn't the problem for me, but eating the same ones all the time is!

I have solved it by choosing one new veggie that I haven't tried every week, or cooking a veggie in a new way. I have since found that I seriously love Brussels sprouts! HA! Who knew?

I would do searches for veggie recipes, find something that appeals to you, and make a small batch of it. Get creative with the veggies and you just may be surprised. also, be careful that you aren't overcooking anything. vegetables taste best when they are crisp and fresh.
 

I know what you mean. The worst part is I'm a vegetarian. My husband (veggie too) isn't a real fan of vegetables so I've been trying to find recipes we'll both like. We seem to like things that have added flavor...garlic, ginger citrus or herbs. Of course I'm trying to avoid butter, cheeses and creams too. Sauteed peppers and onions are great. I'm getting used to zucchini and squash myself...I've found I like the texture of them better when it's grilled. My other new favorite is asparagus... roasted with a teeny bit of parm cheese or steamed, then chilled with italian salad dress or vinaigrette is also pretty tasty.

Have you tried sugar snap peas? I like this recipe...there's added dill, orange juice and shallot for lots of flavor.

I like to roast veggies. Broccoli, onions, sweet potatoes, brussel sprouts, potatoes, garlic cloves, beets, turnips, carrots, parsnips, eggplant, mushrooms, zucchini, squash - and on and on :)

Just throw them on a baking dish with a dash or two of olive oil and roast at 350 till nice and roasted (Sometimes I do 450 if I want them to cook faster, but you have to watch that they aren't too small of pieces or the little ones will burn before they are done).

I like them by themselves, in a tortilla, smothered with hummus, on a pizza - so yummy!

Make some hummus or other types of dips and dip raw veggies into.

Put veggies in things like spagetti, soups, burritos, fajitas, on sandwiches, etc.

Sneak steamed spinach in all sorts of things!

Good luck - Take it slowly and try to discover one new veggie each week or a new way to cook them each week.
 
Asparagus on the grill. Little lemon juice, garlic flavor, can use whatever healthy oil you have available in your plan for the day.

I have not ever tried edame. I hear that is good. Anyone know how to prepare/eat?

Cauliflower with spaghetti sauce or spaghetti squash is good.

I used to abhor veggies. Now I wonder why since I do enjoy most and prefer them plain either raw or lightly steamed. I guess it is an acquired taste. I WISH you luck on your quest.

I eat organic edame frozen already shelled in a bag. I think soy is best gotten organic so that it isn't genetically modified (GMO) in any way. I just microwave it till warm and thawed.
 
Thanks for the ideas. My coach said V8 is really too high in sugars and isn't the best choice. There is a product called Greens Plus and another called Barley Max that they have recommended, but ideally I want to eat realy food and avoid supplements. (Not that supplements are bad) I think maybe we'll have squash, peppers and mushrooms for dinner tonight.
 
Do you like beans? We have started making bean burgers. (I'm a vegetarian). You can sneak lots of veggies in them. Kind of like garden burgers or boca burgers except homemade. You can control what you're putting in them and they really are extremely versatile. Let me know if you want the recipe.:)
 
Try asparagus, sweet peas, pea pods (great cooked or raw), artichoke, squash, onion, edamame, raw carrots and cucumbers.

Green beans are great sauteed with onions and a smidge of olive oil and sea salt. And bake them in the oven with peppers coated with a little olive oil and sea salt. (Kind of taste like fries that way.)
Edamame, boil in water for a few minutes, drain, salt, and enjoy!
Squash bake in the oven until soft, a little brown sugar or maple sugar is good with it. (Spaghetti squash you can eat like spaghetti, never tried it. But, I have heard it is good)

Green Giant froze veggies are not that bad, I really like the sweet corn (yes I know you do not get a lot of nutriments out but I love the taste with a little sea salt) ones and broccoli.

I like to cook my veggies with olive oil and sea salt. And http://www.eatingwell.com/ has some great veggie recipes.

Just keep trying them and experimenting combinations!

I was a corn only person for the first 25 years of my life. Now I am a veggiephile! I got hooked on asparagus from disneyland. they wrapped them in bacon and then grilled em. Squeeze lime on them when done. absolutely amazing.

And LOVE edemame! just pop them in the microwave. great while watching TV.

I tried califlower for the first time last night. Not too bad.
 
Rutabagas! Boil them up like you would potatoes and mash them with some butter and milk. Holy catfish they're delcious! I also will cut them into chunks and put them into beef stew...I don't like the beef part, but I really like the vegetable part. If you want some divine broccoli, take the broccoli, get it nice and wet, sprinkle a bit of salt on it, wrap it up in aluminum foil, and a bit more water inside, throw it on the grill for about 30 minutes on medium heat, flipping once and you will think you're eating candy. Heck, even the kids eat it! You can do the same thing with asparagus.
Now if you're looking to not eat veggies plain, try this out. Can of cream of mushroom (chicken, celery, whatever), 1/3 cup white rice, a big ole' chunk of veveeta cheese (I melt mine with milk before hand), 1/2 cup milk if you put it in seperately, chunks of raw chicken, and whatever veggies float your boat. I put in zuchinni, yellow squash, cauliflower, carrots and broccoli, mix it all together and put it in the oven at 350 for an hour or so. Frozen veggies work best for me, and you can buy the california mix.
