I like to roast veggies. Broccoli, onions, sweet potatoes, brussel sprouts, potatoes, garlic cloves, beets, turnips, carrots, parsnips, eggplant, mushrooms, zucchini, squash - and on and on
Just throw them on a baking dish with a dash or two of olive oil and roast at 350 till nice and roasted (Sometimes I do 450 if I want them to cook faster, but you have to watch that they aren't too small of pieces or the little ones will burn before they are done).
I like them by themselves, in a tortilla, smothered with hummus, on a pizza - so yummy!

Make some hummus or other types of dips and dip raw veggies into.
Put veggies in things like spagetti, soups, burritos, fajitas, on sandwiches, etc.
Sneak steamed spinach in all sorts of things!
Good luck - Take it slowly and try to discover one new veggie each week or a new way to cook them each week.
