Vegetarians - Virtual Meal Plan Swap Meet

I'm heading to Disney in a few days!!! :banana: Any favorite vegetarian counter service meals??? I am not such a veggie burger fan but that seems to be the most common option.

If you do dairy, you can always find pizza, although the only counter service pizza I really like is over at the Boardwalk. We weren't vegetarians last time we went, so I really didn't pay very much attention to that. We're going back in October, so if you found some interesting stuff, please share.

Oh, wait! One thing I remember that was very good was over at Disney Studios. The Commissary served some great vegetarian selections and that was very enjoyable. They had a roasted veggie rollup plus fallafel, hummus and some other things on the menu.

If I remember correctly the Mara (counter service at Animal Kingdom Lodge) offers Falafel.

Starring Rolls (small counter service at Hollywood Studios) has a great veggie sandwich.

The tacos/burritos at El Pirata y Perico at Magic Kingdom can all be made vegetarian (substituting the meat for black beans) and are delicious (if you are there when it is open!)

Tangierine Cafe in EPCOT at Morocco has some great options as well.
 
All veggie dinner tonight (after a relatively sinful lunch)... Roasted Scapes, Squash, Mushrooms and Onions; roasting as we speak. This is our first foray into Garlic Scapes, so we are not sure how well it will work out... we'll see!

We are doing most of our bread-related meals with whole wheat wraps now. I would like to find a whole grain pasta too, but so far can't find any I like. Any recommendations?
 

We didn't dislike the Sunshine burgers, but they weren't really what I was hoping for.

By the way, the Roasted Scapes, Squash, Mushrooms and Onions was great! Scapes are a winner! Now I've got a bowl of the first fresh, local, organic strawberries of the season in front of me. So good!

We like the Barilla whole grain. But, I like a really dense pasta and prefer the whole grain.

We try to rotate about 14 different meals and add in something new about once a week.

We had an excellent quinoa salad tonight that everyone loved.

I made a chickpea & broccoli casserole earlier in the week that we couldn't get enough of.

The rest of the week was more typical fare like black bean burgers, pasta, chili, etc.

check out the store, there's a lot of different varieties (and lots of other stuff too!)

I personally like their soy milk because there are so many different options.
 
ooh bicker we got some local strawberries today too.............:):)

i have to report on the celebration roast, our first time trying this and it is really very good. I would definitely get it again, its a little pricey, so I am thinking a once in a while thing.

we had stir fry tonight with the Companion braised seiten and veggies.
I am making pasta primavera tomorrow,
cheese and broccoli, and rice and cheese strudels are on the menu for this week ( from the moosewood cookbook)
quesadillas
"chicken" parm and pasta ( with the Quorn chicken patties)

I'm always looking for good veggie recipes. Great thread. :)

We love Cajun 15 bean soup, by Hearst. The beans come with a Cajun spice/flavor packet. Really spicy! We have added sausage to it, but we've eaten it without as well. Very tasty either way. I prepare the beans and leave them in the crockpot all day. I've taken them to work functions and it's always a hit and always completely gone.

Can I join? I'm not vegetarian but I don't really enjoy huge quantities of meat, particularly red meat. I do enjoy fish, however. I'm looking for some cheap, quick and easy ideas for two people.

I had no idea there were so many veggies on the boards!
Anyways this week I had (in no particular order)
Home made pizza
Pasta with garlic and oil
Broccoli, a whole potato, and Bocca Chi'kn nuggets
Rice, green beans, MorningStar patties (which I am a HUGE fan of)
Salad with an egg
Fresh fruit
 
This week:

Polenta, layered with tomato sauce, spinach, eggplant and mozzarella cheese.

Left-over chili over brown rice. Corn in the chili... I love corn in chili.

Frittata with Sunshine breakfast sausage (but its still for dinner, eh?)

Pasta primavera (or some kind of pasta with broccoli)

I think I'll bring a pizza home for dinner one night, too.
 
Back from Disney World!

My favorite meal was at Boma. The soup was SO good. The chefs are really good about telling which items are vegetarian and which are not. Rose and crown has a new vegetarian option on the menu (vegetarian shephard's pie) which was yummy as well. :thumbsup2

For fast food got a veggie taco salad at Peco's Bills and did eat a couple cheese or veggie pizzas. Sunshine seasons at Epcot got the veggie plate with veggie lo mein, broccoli, and stir fry veggies.

Only place was disappointed was the sit down place at the Moroccan area of Epcot. The veggies with couscous was just okay. The one I make is better.

I'm going to do a food report and I took pictures of everything to go with it. :)
 
Tonight I made fried Tofu.
totally fattening and unhealthy.
I cut the tofu into chunks and coated it with the batter stuff that you find near the seafood at the market. its in a blue box.
anyway, then i deep fried them in peanut oil
totally good, the kids dipped them in duck sauce
we also had salad and stir fry veggies, so not 100% bad, it all balanced out! lol

so tomorrow my plan is the broccoli rice studel from the moosewood cookbook, i haven't made it yet.

What did they substitute the ground meat with? That's one of my favorite things to eat while at Disney. Last time we were there and pre-vegetarian days, they didn't have it on the dinner menu, but the server said I could order it and they'd make it up for me. It was sooo yummy. Comfort food at its best.
 
Just wondering, do folks here wear vegan shoes or are you still wearing leather? I'm having trouble finding non-leather shoes with closed toes that fit the "business casual" dress code at work (no crocs). Due to my weird feet, I really need shoes that are open in the back (slides) or have a slingback, not completely closed shoes. I'm looking for something I can wear with casual skirts/dresses.
