I've been vegetarian for 20 years, my husband for close to 18 years, and neither one of us has ever been anemic, so I disagree with another poster that it's hard to get enough iron on a vegetarian diet.
We eat a TON of beans and rice, my husband eats a lot of soy (I tend to eat minimal soy), we eat a lot of eggs (we're not vegan). We eat a lot of nuts as well, almonds, cashews, walnuts, pecans, etc. Those are usually our go-to snack. We also eat oats often, mostly in granola, though sometimes in regular oatmeal.
