Using GPay (Google) in parks

Can you pay at food kiosks, stores and restaurants with GPay in the parks?

Most areas have tap-to-pay and I was able to use NFC ApplePay without any issue. I can't confirm for table service restaurants, but kiosks & shops (where you pay at a counter) and mobile order (where you pay on device) it works flawlessly - faster than paying with MagicBand.

I would imagine GPay would work similarly well.

Yes, I use Google Wallet at Disneyland all the time. WDW uses the same payment terminals.
