My parents are from the Philippines and vinegar is THE condiment over there. A sauteed meat dish called adobo is pork or chicken cooked with vinegar, soy sauce, bay leaf, and peppercorns.
My favorite thing is fried foods and vinegar. Fried fish, vegetables, and eggrolls are great with vinegar. Especially if you infuse the vinegar with chillis and whole garlic cloves. You just stick a handfull of each in a bottle of white vinegar (after making a little room in the bottle) and let it sit for a few days to get spicy. It cuts the greasiness in the fried food.
Since it's only vinegar, it's a worry free condiment. No fat or salt. Even my "All American boy" loves this with fried fish and rice!
