I'd like to see more tables outside for people watching
I would like that as people watching is what I do a lot at Universal. I can guess that they didn't want to put in too much seating if that means people aren't actively doing other things. Their existing parks don't have a huge amount of tables. I mean I sat quite a lot either on some random steps (I remember ones near Mummy while watching Blues Brothers) or by garden beds (like out in the sun waiting for my husband to ride VelociCoaster) or over underneath the support part for Discovery Center while waiting for my husband to watch VelociCoaster or on a support beam over by Doctor Doom's Fearfall waiting for my husband to do that ride, etc.
We did people watch at the tables by Jurassic Park River Adventure just outside the splash zone but I know they did more restrictions to that area during covid. It was not as open free for all when we were there last in 2022.

Recommend L'air DeLa Sirene as the food was pretty good.
We had a croissant, cinnamon roll, creme brullee and split a chicken dish.
BBQ at Oak and Star tavern was forgettable.

I had been looking forward to many things - its its not cheap - and it was not great.
Universal has never been about food so not personally a big issue for me but I will say my disappointment here isn't that the food may not be the most stellar but the pricing of the food. For the most part the pricing is skewing higher than I would like whereas their existing parks I feel were more down to earth pricing.
Again that is just my perspective from watching all of Ricks Live Streams the first 5 days compared to what I experienced. I also paid attention to several other streamers and really the only one that really told it the way it is is "the view from the cheap seats" probably why he is not on the invite list.
This is where I say that I don't tend to watch streamers, I hardly watched them years back but I mostly just catch the random video here and there when I search for it, like I searched for a video of the vampire steakhouse. That person had a POV video of the steakhouse and the food. They were the ones to say it was incredibly dark inside but they also felt it was on theme. I can't remember when the video was posted or taken but it did let me know to avoid the steak that was practically mooing back at you.
Streamers (rather than people who just take their own video and uploaded it for fun or share it on FB for fun) can be good for giving POV of the land but regardless of whether they are invited or not they won't have the best perspective, either they are not going to tell more non-positive things, or they may nitpick on things that are so minute it's just not fair, it's much harder to find people who are balanced but vloggers by profession.
But I'm the person who also goes to reviews and zeros in on reading the one to two stars first so I can figure out if it's a defect, user error, or a personal problem with something that I would have no issues with. I don't go to the 5 stars until last.
Lots of characters over in berk and they were a lot of fun
Berk seems to be a land that is giving the most "I'm satisfied with". I'm not a How to Train Your Dragon person but I'm really excited with how everyone talks about the attention to detail.
the specialty drinks at Universal are too sweet and too many syrups.
So this is where I say I don't get alcoholic beverages much at the parks. Primarily because of the heat. It's not a good thing to do to drink too much alcohol when combined with the heat and the sun. However, this is also where I say I'm a beer drinker who does drink other things as well but primarily beer. So for that I have mostly at Universal stuck with beer in Harry Potter, a drink at the pub soaking up the ambience was quite enjoyable.
That said we do like to go to Oga's at DHS and the main complaint there is the drinks are sugary, syrupy and weak. But you're there for the ambience and most don't go there expecting "value for your money". So gleaning off this that's probably how I would have to look at it. The actual drinking of the mixed drinks probably meh at best (similar to Oga's) the ambience might be more what of you're going for, that and the souvenir drinks. ETA: even non-alcoholic at a theme park my expectations is they probably won't be good value for money but the "experience" of drinking it what most will be paying for.
A current trend seems to be bitters and bitter beer in things, that might an explanation for why there's a focus. Then again it's like going to DL/DCA both my husband and I can't stand IPAs and it's CA there's a lot of IPAs around *sigh* story of our lives.

That's unfortunate. That DISer friend I've spoken about lives for the characters and even on Monday (which she said was a rough day at the parks) she's been very happy with the characters. Many of her photos are of the characters lol. Invisible Man though she's taken several photos of which matches your experience that they seem to be using that character a bit more than I originally thought. I mean I was thinking Invisible Man how are they going to make that work as a prominent character but it's working as far as my opinion is.
I do remember how plentiful the characters were over at Galaxy's Edge in the beginning but ebbed pretty quickly after opening. I also remember Harry Potter having a lot of characters in the beginning but ebbing over the years. I'm sure that's going to be the story for Epic BUT Universal has talked so much talk about the characters most especially for Dark Universe that would be a darn shame to not have that last for long.
The music was not helping IMO but it needs something.
I should also mention the fountains were really cool - I miss the fountain at Epcot - and this is much better.
So the fountains at Epic use the same design as the Bellagio Fountains (which happen to be one of my husband's favorite features of Vegas). The undulation, movements, dancing-like of the water by means of the jet design it uses is mesmerizing IMO. There are a lot of customization that Universal can do to tweak it and keep it fresh so hopefully they do that, an easy, inexpensive overall and less time consuming way of adjusting a feature over the years. Their water night show over at the Studios seemed to be off more than on in terms of showings

though I haven't seen the new show since it debuted.
