do a google on the I trolley system. if you can not find anything, i do have a link somewhere in my files. i can post it for you if you bat zero with google search. it is a long walk from universal rph to the I drive/international drive
the I Trolley runs its course on I drive. it makes stops all along the way for the tourist places. its cheap and good form of transportation for those that doo not want to walk or rent a car. traffic will be tremendous at the christmas time on I drive in that area.
i also recommend sunray transporation. i used them last month and felt it was the best deal around., tell bob i said hello. did you get the discount for sunray? if not , pm me for the info on how to get it.
call in advance to the hotel if you want to order a birthday cake. the gm is changing at rph so i can't say what will be given free for the bday for your husband. cakes can be received but there is a charge for them. disney charges around $30 for their cakes that come from the GF, don't know the price at rph for bd cake. you do need to pre order though.
since you wil be on site, you will have fotl, no waiting for rides.
still, the park will be crowded and even though you have no waits practically, you will have crowds to walk through to get around in the park. also, crowds and lines for food counters in the park. with that in mind, it might take more than 3 days to do the parks completely. city walk is a place you should check out also while staying on site.
coffee........hey, i stayed 10 nights at disney last month before i moved over to universal hotels and that nescafe is nasty stuff.......you wil fine you will have real coffee at rph and at the parks. you will have a coffeemaker in your room with coffee packs. it was much much better than what i had at disney resturants. if you needmore coffee packs at rph, call star service on your room phone. they will send it up.
yes, you can have turn down service, ask for it when you check in.
if you are missed, call star service from your hotel room.
we did wonderworks before and the kids liked it.
i think they liked ripleys believe it or not just as much. its across the street from the mercado.
its a long walk to I drive from the hotel. if you are used to walking then it should be okay. i think the one time i walked it took me 15 minutes.
just so much traffic zooming by bothered me more than the walk.
there are taxis available.
check with your hotel front desk for the options you can use.
stop in at the mercado for tourist booklets. you will find discounts listed in them for resturants and activities in the I drive area.

in some of those threads, i and others have practically written essays to answer questions in depth. i'm not trying to avoid helping you but some of the other threads has more detail than what we have posted here.
