It's funny because we usually do the opposite for many of the same reasons mentioned in this thread. We too find Universal a bit less "planning" intensive and as such we like to start with Universal so we can ease into vacation. All the travel, checking in, getting set up in Orlando is enough without thinking about trying to hit the ground running at full speed for Disney. We start with a leisurely half day at the Universal parks...usually spend another two full days and then move over to Disney parks (when we're fully time and weather adjusted and ready to "go").
Of course, usually over-riding everything is whether there is a significant discount in cost for switching the order and thus far there has not been (or it's been cheaper to start at Universal).
