Undercover Tourist ticket upgrade?

Does anyone know if tickets purchased through Undercover Tourist can have days added on at a WDW resort or park?

Absolutely!

Be sure to actually USE the ticket to enter a theme park at least once BEFORE you do the upgrade
so that the ticket CM can "bridge" the ticket up to the current WDW gate price.
That way, you can "keep" the discount.

On our recent October trip we upgraded our base ticket to a Park Hopper at a ticket kiosk at Epcot with NO problems at all.
